These hidden veggie chicken fries were a hit!👏🏻 Ingredients: • 1lb ground chicken • 1 bell pepper • 1/4 of yellow onion • 1/2 small zucchini • 1 tsp paprika • 1/2 tsp salt • 1/2 tsp black pepper • 1/2 cup-1 cup breadcrumbs • 1/2 cup-1 cup almond flour other veggies that will work: carrots, broccoli, garlic, cauliflower, etc! Prep: 1. Preheat oven to 400 degrees F. 2. Add all veggies to a food processor or finely chop. In a large bowl, add the ground chicken and seasonings, and a handful of bread crumbs. 4. Add as much of the chopped veggies to the chicken as you want and combine! I did about 1/3 cup. If the veggies are too watery, don't add too much. Freeze the rest of the chopped veggies to add to a soup or to make this again! 5. In a small bowl, combine equal parts almond flour and breadcrumbs. 6. Roll and form the chicken fries. Cover with almond flour/breadcrumb mixture. 7. Lightly dab with oil. 8. Bake for 15 minutes then flip and bake for another 15 minutes! or air fry for a more crispy texture! 9.
