2 T Avocado Oil
1 Onion (chopped)
3 Stalks Celery (Chopped)
5 Cloves garlic (Smashed)
3 Sprigs of Thyme (Fresh)
1 Sprig of Rosemary (Fresh)
2 Bay Leaves
2-3 Lb. Chuck Pot Roast
1 Container Dr. Kellyann Bone Broth
1 Cup Water
Salt and Pepper

1. Salt pot roast. Pot roast can be added frozen (and does not need to thaw). If not frozen, sear the meat in a dutch oven in avocado oil before sauteing vegetables.
2. Saute onion and celery in avocado oil until slightly translucent.
3. Add Garlic, Thyme, Rosemary, and Bay Leaves, stirring occasionally so garlic does not burn.
4. Add bone broth, 1 cup of water, and pot roast. Crack some pepper on the meat.
5. Place in 325 degree oven and roast for 3-4 hours until tender.
6. Remove from oven when done. Place meat on platter and cover to keep warm. Strain fat from remaining liquid. Add mixture of arrowroot and water (as thickener) to broth to make gravy.
