Air-Fried Chilaquiles Verdes with Shredded Chicken

Crispy air-fried tortilla chips smothered in tangy salsa verde, topped with tender shredded chicken, cheese, and avocado—perfect for breakfast or brunch!

Ingredients

For the Tortilla Chips:
	•	14 corn tortillas, cut into pieces
	•	2 tbsp olive oil

For the Salsa Verde:
	•	10 tomatillos, husked
	•	3 serrano chiles
	•	½ onion
	•	5 garlic cloves
	•	½ cup cilantro

For the Shredded Chicken:
	•	2 chicken breasts, cooked & shredded
	•	½ onion, sliced
	•	1 tsp oregano
	•	½ tsp cumin
	•	Salt & pepper
	•	1 tsp chicken bouillon
	•	1 can (14 oz) San Marzano tomatoes
	•	1 tsp garlic paste
	•	1 tbsp olive oil

For Assembling:
	•	Queso fresco or shredded cheese
	•	1 avocado, sliced

Instructions

1. Air-Fry the Tortilla Chips
Preheat air fryer to 375°F (190°C). Toss tortillas with olive oil, arrange in a single layer, and air-fry for 10 minutes, shaking halfway. Set aside.

2. Make the Salsa Verde
Boil tomatillos, chiles, onion, and garlic for 10 minutes. Blend with cilantro until smooth.

3. Cook the Chicken
Sauté onions in olive oil. Add oregano, cumin, salt, pepper, chicken bouillon, and garlic paste. Stir in San Marzano tomatoes, cook for 5 minutes, then add shredded chicken and simmer 5 minutes.

4. Assemble
In a skillet, toss tortilla chips with warm salsa verde. Top with shredded chicken, cheese, and avocado slices. Serve immediately!

This Chicken cacciatore recipe it’s so good for winter weather and it’s so easy to prepare. 

Ingredients:
- 1 package of chicken thighs
- 1 round tomato, cut into chunky slices
- 1/2 yellow onion, sliced
- 5 garlic cloves, chopped
- 1/2 teaspoon of olive oil
- 1 small red bell pepper, sliced
- 1 yellow or orange bell pepper, cut into squares
- 3 black olives
- 1 celery stalk, chopped
- 1 bag of broccoli and carrots
- Garlic powder
- Salt and pepper
- 1/2 cup of tomato sauce (such as Rao’s or any brand of your choice)

Instructions:
1. Season the chicken thighs with garlic powder, salt, and pepper. Cook until tender, then set aside.
2. In the same pan, add olive oil, onions, and chopped garlic. Sauté until translucent, then add tomatoes, celery, and bell peppers. Cook for a few minutes before adding the cooked chicken, tomato sauce, and black olives. Let it simmer for an additional 5 minutes.

3. Meanwhile, in your oven or air fryer, cook the broccoli and carrots with a sprinkle of salt and garlic powder for just 7 minutes.

4. Serve the chicken and vegetable mixture over pasta, and garnish with Parmesan cheese and chili flakes to taste.

Best Salsa Verde Recipe
15 tomatillos 
3 garlic cloves 
1/2 onion 
1/2 cup of cilantro
1 or 2 Serrano peppers
1 Poblano pepper 

Remove husk from tomatillos, wash then put on a tray with Chiles, onion and garlic. Bake for 20 min 450  on broil setting. Blend with washed cilantro and deveined poblano pepper. Add salt to taste.
How to clean/devein poblano pepper:
Cut open to remove seeds and peel the poblano skin after broiling.
Salsa Verde is great for tacos, enchiladas, or with corn chips.

Turkey Picadillo Recipe
Ingredients 
2 tablespoons olive oil
2 small yellow onion - chopped
1/2 medium green bell pepper - chopped
1 /2 red pepper chopped 
1 pound lean ground turkey. 
4 cloves garlic - chopped e
1 teaspoons dried oregano - preferably Mexican 
1 teaspoons ground cumin 
1 large bay leaf 
1 can (14.5-ounce) diced fire-roasted tomatoes - undrained or just chopped tomatoes or cherrie tomatoes 
 4  green olives with pimento
2 tablespoons of tomato paste.
1 tablespoon capers
Splash of apple vinegar or to taste - 
5 tablespoons of katchup 
Freshly ground black pepper
Beef powdered bouillon 
Instructions 
Put Olive Oil in a pan -add onion, garlic and sauté until the are translucent. 
-Add tomatoes and cook for 5 more min, 
-add all the spices and the beef bouillon and simmer 
-add Turkey and cook for about 8-10 min
- add olives, capers, bay leaves, tomato paste, ketchup and apple cider vinagre. Add pepper.
Cook for 5 more min and  it’s ready. 
I normally serve with white rice and black beans

I also frizzed garlic so they don’t go bad. 
This recipe I make it once a week it’s so easy and delicious.

Ingredients 
* 1 lb ground chicken or Ground pork 
1 TBS peanut oil
½ onion minced
1 cup red or green pepper diced
1 8 oz can water chestnuts drained and minced
For the Sauce:
3 TBS soy sauce
3 TBS hoisin sauce
1 TBS sesame oil
1 TBS rice vinegar
1 TBS peanut butter
1 TBS honey
2 tsp sweet chili sauce 
½ tsp garlic powder
¼ tsp powdered ginger
To serve
¼ cup peanuts crushed
1/2 cup of shredded cabbage with carrots. 
1 chopped green onion. 
Lettuce 
White rice 
or your favorite Asian salad
Instructions 
Whisk together sauce ingredients until well combined. If you use a firmer peanut butter you may need to microwave the mixture for 30-60 seconds to melt it and ensure everything is well-mixed.
Heat 2 TBS peanut oil in a frying pan. Once hot, Add onions and cabbage and cook for 5 minutes or until the onions are becoming translucent.
Add the peppers and water chestnuts and cook for about 5 minutes or until the peppers are becoming soft, set aside. Cook ground chicken or pork then add veggies and 
Add sauce and simmer on low heat until the chicken and veggies are evenly coated and everything is heated through.
Serve in lettuce leaves, on top of your favorite Asian salad, or over noodles or rice! If you want you can make extra sauce to have on the side.

Coca-cola braised Carnitas bowl recipe

4-5 lb pork shoulder/pork butt
2 spoon of oil
1/2 cup of milk
1/2 cup Mexican Coca Cola or regular
1/2 orange
Cumin
1/2 head of garlic
6 bay leaves
1 tsp whole cloves
1/4 of mojo liquid to marinade. 
½ onion
½ cup water
1 tbsp salt
Pico de gallo salsa
Avocado/guacamole
Cilantro, chopped
Onion, chopped
Limes

Instructions
Place the pork in a pan and fried, add 1/2 onion then season with the salt and pepper. Cook all sides. Pour in the Mexican Coca-Cola, orange juice and leave the rest of the orange inside, milk, and mojo marinade then add allspice, garlic and bay leaf. Add 1/2 cup water to the pork, cook for 5 min put everything in the instant pot for 35 min after shred the meat.
In a bowl put rice, beans lettuce, poco de gallo salsa, pork, guacamole and cheese.
Here's a cheat tomato sauce recipe using Rao's sauce:

1. Heat a tablespoon of olive oil in a pan.
2. Add minced garlic, grape tomatoes and chopped onion and sauté for a minute.
3. Pour in a jar of Rao's sauce.
4. Add a teaspoon of dried basil and oregano for extra flavor.
5. Simmer the sauce on low heat for 10-15 minutes, stirring occasionally.
6. Taste and season with salt and pepper if needed.
7. Serve over your favorite pasta or use it as a base for other dishes.

Salsa roja Mexicana 

12 Roma tomatoes
3 Serrano Chiles
2 garlic gloves 
1/2 onion
cilantro
First fry everything in pan with 1 tablespoon of oil. 
On the side clean and chopped cilantro.
Blend everything with cilantro and add salt to taste. 
Ready! So easy and so good!!’ I use this salsa with everything!

Cauliflower rice in 8 min. So easy. And delish!
Fry 1/4 of chopped onion, 2 chopped garlic cloves, for 4min, 
add veggies, garlic powder, cilantro and fry for 2 min then  closed lid for another  2 min. Ready!! 😋I am not eating rice, so I am trying cauliflower and I love it!! Also my husband made a cauliflower mash it was delicious too. You should try it!!

Best Mango salsa recipe! 😋
You need to ask my family but I think this recipe it’s the most delicious ever😁😘🥰
So easy 
5 avocados 
2 garlic gloves chopped 
One bushel of cilantro clean and chopped 
 1/2 of chopped white onion 
1 or 2 mangos 
1 or 2 chopped jalapeño pepper. 
Salt and 3 whole lime juice. Mix and enjoy with tacos or carne azada also with smocked salmon goes really good.

Enchiladas divorciadas. Red and green chicken enchiladas.

Ingredients: 
2 Chicken breast 
5 Tomatoes 
1/2 Onion
5 Garlic cloves 
Pinch Cumin
Pinch of Cinnamon powder 
Salt
Pepper 
Pinch of Cumin 
Complete seasoning
2 Bay leaves 
16 tortillas 
 Instructions:
Cook the chicken on your instant pot soup/broth 
Chopped onion, garlic red / green pepper, tomatoes. 
Heat your Always Pan and fry all the veggies once the chicken is cooked shredded add it to the pan and mix. Add the spices to taste. 
Fry the tortillas and make the enchiladas. 1/2 green salsa and 1/2 red salsa. Put in the oven for 20 min at 400 so the cheese melts. Add refried beans on the side and Mexican cream to the top. 
Salsa Verde 
12 tomatillos 
2 garlic 
1/4 onion 
1 cup of cilantro 
2 Serrano chiles 
Put everything except cilantro in the oven to broil for 10 min after done blend with the cilantro.
Salsa Roja:
12 red roma tomatoes 
1/4 of onion 
2 garlic cloves 
1/2 of chipotle chiles (can chipotles) 
Put everything to broil  in the oven except for the chipotles Chiles for 10 min and once is cooked blend and add the chipotles Chiles. 
Add sal to taste.

Poblano Sauce. 
• 1 poblano pepper Roast and clean
• 3 Serrano chiles 
• 12 tomatillos/ green tomatillos NO green tomatoes 
• 1 cup of cilantro
• 1/2 onion
• 3 garlic gloves 
• 2 zucchini’s 

Instructions 
• first clean everything then in a baking tray at 400 for 20 minutes roast the veggies.
• The poblano pepper clean it once is roasted put it in a ziplock bag so it’s easy to peel (seeds and skin)
• Everything goes in the blender. Add the clean cilantro then blend.
• In a pot get 1/4 of onion and fry until traslucid and add the  sauce. Let it cook for 5  min and it’s ready. add salt to taste.
• You can use for anything you like.

Beef and mushrooms recipe. 
INGREDIENTS:
1 tablespoon of butter 
1 Chalote 
1/4 cup parsley
1/4 onion 
5 garlic cloves 
1 teaspoon dry oregano
3 tablespoons of red wine or Marsala wine 
1/2 cup of beef broth 
1 can of tomato paste 
1 tablespoon of Worcesctershire
A1 sauce, Tabasco if you like. 
1 tablespoon cornstarch 
INSTRUCTIONS:
- [ ] In a saucepan melt the butter. Add chopped chalotes, chopped parsley, chopped onion, chopped garlic and 1/2 teaspoon oregano and fry for 10 minutes. 
- [ ] Season with salt and pepper to taste.
- [ ] Add the wine and cook for 4 minutes.
- [ ] In a cup mix the beef broth, tomato paste, Worcesctershire sauce, maggi(seasoning sauce) and tabasco and A1 sauce. 
- [ ] Slowly add it to the mushrooms let it cook for a couples of minutes.
- [ ] In pan seared the meat or if you have a grill you can char meat over coals for about 5 minutes until meat is seared and color look right. 
- [ ] Put 1/2 of the mushrooms sauce on top of the meat and add 1/4 of cup of beef broth.
- [ ] We will finishing the cooking in a slow cooker for 4 hours or in the Dutch Oven for 1:30 min

- [ ] In a cup mix water and 1 teaspoon of corn starch and add to the left over sauce from the cooked the beef, cook for about 2 minutes . 
- [ ] Serve with white rice 
Chicken mushrooms sauce
- [ ] If you want to do it with chicken. Just grill chicken and add the sauce serve with rice.

Cheese Flan (pumpkin flavor) 
My Cheese flan recipe:
5 eggs, 1 can of  condensed milk, 1 can of  evaporated milk, 1/2 teaspoon of cinnamon, 1 teaspoon of vanilla (Mexican vanilla is better but if not it’s ok)
1 package of 1/3 reduced fat or regular Philadelphia cream cheese. (I used pumpkin flavor)
1 cup of white sugar. 
Instructions:
1- In a small saucepan heat white sugar until it melts and gets a caramel color, aprox. 7 min. Set aside 
2- Pour caramelized sugar in the flan pan.
3- Place all other ingredients in blender and blend until smooth
4- Pour the mixture on top of the caramelized sugar and cover. 
5- Place flan pan in the oven in a water bath (inside a deep baking tray 1/2 full of water). Make sure water does not get into the flan. 
5- Bake at 350 degrees for 1 hour and 20 min. When is done turn off the oven and 
Let it cool down inside the oven for about 30 min then 
Remove from the oven and let cool for one hour and then refrigerate for at least 3 hours and then unmold.
It’s better if you refrigerate the whole night. Best to make it a day in advance. It’s really good 😊😁🥰🍮

Marinade the cubes pieces of pork with powder garlic, and pepper. 
In a tray low boil 12 tomatillos, 1/4 onion, 4 garlic cloves, and 2 serrano peppers for about 10 min. Blend…. 
Fry 1/4 of onion cut in small cubes with pork and add 3/4 salsa verde set aside the rest for after. Add 1/2 teaspoon chicken bouillon powder and cook in the meat/stew setting for 35 min. Hope you like it. ☺️
