This Easy One-Pot Creamy White Chicken Chili is the ultimate busy weeknight meal! Using rotisserie chicken makes it quick, simple, and packed with flavor.

Ingredients:
• 1 large rotisserie chicken, shredded (about 4–5 cups)
• 3 small onions, diced
• 4 cans white beans, drained
• 2 cans corn, drained
• 2–3 cans diced green chilies
• 2 tbsp minced garlic
• 2 (32 oz) cartons chicken broth
• 2 tsp salt
• 1½ tsp black pepper
• 2 tsp cumin
• 1½ tsp chili powder
• ½ tsp red pepper flakes
• 1 package (8 oz) cream cheese, softened
• 1 cup heavy cream (optional)
• 2 cups shredded mozzarella cheese (optional)

Directions:

1. Add the onions, beans, corn, green chilies, garlic, chicken broth, salt, pepper, cumin, chili powder, and red pepper flakes to your crock pot.
2. Cook on HIGH for 3½ hours.
3. Stir in the shredded rotisserie chicken, cream cheese, heavy cream, and mozzarella cheese.
4. Continue cooking for 30 minutes, stirring occasionally until the cream cheese is fully melted and everything is creamy.
5. Serve and enjoy!

This is the perfect cozy meal for busy nights and makes amazing leftovers! 😍
