Enchilada hack you didn’t know you needed! 

Skip frying every tortilla, this method is faster, cleaner, and still gives you that crispy finish. 

Just microwave tortillas, fill, roll, brush with oil, bake, sauce, cheese, bake some more and done.

📌 I used birria this time (recipe coming soon), but any filling and sauce work.

Homemade Birria Recipe Traditional + Birria Bomb Shortcut

Ingredients 
4 lbs beef chuck roast
4 dried guajillo chiles 
4 dried ancho chiles
1/2 white onion
5 garlic cloves 
2 plum tomatoes 
1/2 cup of cilantro 
3-4 cups of water
2 tsp chicken bouillon aka Knorr
1 tsp cumin
1 tsp paprika
1 tsp dried cilantro (optional)
1 tsp chili powder 
1 tsp onion powder 
1 tsp dried oregano
1/2 tsp grounded cloves
1/2 stick of cinnamon 
1 bay leaves
Salt/pepper to taste

Optional Toppings:
Corn tortillas
Chopped onion
Chopped cilantro
Lime wedges
Avocado
Cheese (for quesabirria or enchiladas

TIP: If you have Birria Bombs, they are spice-packed flavor. You can make a super easy version without dealing with chiles and spice measuring.

NOTE: This reel shows both traditional ingredients and the Birria Bomb shortcut, so you can choose what works best or even combine elements from both.

Directions:
🌮Add meat, spices, and water to a slow cooker and let it slow cook for about 6 hours 
🌮Halfway through cooking…
🌮Boil guajillo and ancho chiles
🌮Blend onion, tomato, cilantro, and garlic and add the mixture
🌮After boiling your chiles, they will be soft. Remove stems and seeds, blend until smooth and add the mixture
🌮NOTE: For a smooth chile sauce, strain the blended mixture (optional)
🌮Now let it slow cook three more hours or until meat is tender
🌮Remove beef and shred it

Quesabirria Taco Option:
You can stop here, or… make tacos. Dip your tortilla in the broth, fill it with meat and cheese, then sear until crispy. Serve with broth (consommé) for dipping.

Dill-icious Potato Salad

***Disclaimer: No, this isn’t one of those two-ingredient wonders, but the sound was trending, and my willpower didn’t stand a chance. 😂 

Ingredients:

3 lbs baby yellow and/or red potatoes, halved
1 cup mayonnaise 
1/2 sour cream
1/4 cup mustard
1 tbsp apple cider vinegar
1 small red onion, finely chopped
2–3 stalks celery, finely chopped
1/4 cup chopped fresh dill (plus extra for garnish)
1/4 cup dilled pickles, finely chopped
Salt and pepper to taste

Instructions:
Boil the potatoes: Place halved potatoes in a large pot of salted water. Bring to a boil and cook until fork-tender. Drain and let cool slightly.

Mix all ingredients and gently mix
Garnish with extra fresh dill.
Enjoy! ☺️

Can we talk about this stuffed potato perfection? 

A loaded twice-baked potato with crispy cheddar, creamy filling, and fresh herbs, paired with a juicy grilled steak, and a crisp side salad. This is what dinner dreams are made of. 💯

Ingredients:
4 large russet potatoes
1 tbsp butter
Salt and pepper (to taste)
1 bar of cream cheese
2 cups shredded cheddar cheese
1/2 cup cooked and crumbled bacon
1/4 cup of parsley 
	
Instructions:
1️⃣Boil the potatoes
2️⃣Scoop and mix
Once slightly cooled, slice each potato lengthwise.
Carefully scoop out the inside, leaving a thin layer to keep the shell intact.
In a bowl, mix the scooped potato with 1 cup of cheese, the bacon, parsley, cream cheese, butter, salt/pepper until creamy.
3️⃣Stuff and top
Spoon the mixture back into the potato skins.
Sprinkle the other 1 cup of cheese on top.
4️⃣Bake
Bake potatoes at 350 degrees for 15-20 minutes, until golden and heated through.
5️⃣Garnish with parsley and serve

Beef & Potatoes Au Gratin
Easy, hearty & full of flavor

This Beef & Potatoes Au Gratin is pure comfort in every bite. 🧀🥔🍖

Ingredients:
1 lb ground beef
3–4 medium potatoes (thinly sliced)
2 cups shredded cheddar cheese
2 cups shredded gruyere cheese
1/3 cup heavy cream
2 tbsp butter
1/4 cup chopped parsley, 
1/2 cup chopped onion 
1/4 cup chopped chives
Salt/Pepper

Steps:
1.	Brown the beef and onions, add some salt/pepper. Once cooked, add the chopped parsley and mix
2.	In the slow cooker, add a layer of potatoes, beef, cheese. 
3. Another layer of potatoes, beef, pour the heavy cream, add the rest of the cheese, sprinkle the chives
Cook on high for 5 hours
