God must have known I was going to be down, because I made this chicken & dumplings before I started feeling horrible. 🙏🏽 There’s nothing like a pot of comfort food ready when your body says, “Sis, sit down.” This is one of those meals that feels like a hug — simple, cozy, and full of love. If you’ve never made homemade dumplings, don’t be scared… they’re easier than they sound! 🍲 Crockpot Chicken & Dumplings (Kiya’s Way): You’ll need: • 2–3 boneless skinless chicken thighs or breasts • 2 cans cream of chicken soup • 1 box chicken broth (or about 4 cups) • 1-2 small onion, diced (optional) • Garlic powder, onion powder, black pepper, seasoning salt OR 1 pkg of fresh poultry herb OR both if you like (to taste) • 2 cups chopped carrots, and 2 cups of chopped celery For the dumplings: • 2 cups all-purpose flour • 1 Tbsp baking powder • 1 tsp salt • 2 Tbsp butter, melted • About ¾–1 cup milk How I make it: 1️⃣ Season the chicken and fry it in the skillet for 1 minute per side then Add chicken, soup, broth, onion, carrots, celery and seasonings to the crockpot. Cook on low 6–7 hours or high 3–4 hours. 2️⃣ Shred the chicken and stir it back in. 3️⃣ Mix dumpling ingredients until a soft dough forms. 4️⃣ Drop spoonfuls of dough into the bubbling crockpot. 5️⃣ Cover and cook on high about 45–60 minutes until dumplings are fluffy and cooked through. Don’t stir too much — let them do their thing! Serve hot and thank God for comfort you didn’t even know you’d need. 🤍 If you’re feeling low today, I pray you have something warm waiting on you too.
