This simple recipe is a family favorite in the spring and summertime. They have already requested I bring it to Easter! It’s so easy and surprises everyone with how flavorful the combination is. 

Grape Salad
In a large bowl, mix together:
1 cup brown sugar 
8 oz. cream cheese softened 
8 oz. sour cream 
Then add in: 
Green grapes (3 cups sliced in halves) 
Red grapes (3 cups sliced in halves) 

Refrigerate for 2 hours minimum.  Top with 2 tbsp. brown sugar and chopped pecans (optional). Serve chilled and enjoy!
This olive cheeseball is a family favorite and  perfect for upcoming Easter brunches. 

Ingredients:
2 blocks cream cheese, softened
2 cups shredded cheddar cheese (1 cup for mixture, 1 cup for garnish)
1 packet Hidden Valley Ranch seasoning mix
1 heaping cup sliced green olives
Crackers of your choice

Mix cream cheese, shredded cheese, ranch seasoning, and green olives together. Put into the fridge for about 20-30 minutes to set up. You can shape it into so many different things - an egg or a carrot would be perfect for Easter! Add rest of cheese, garnish of your choice, and serve with crackers.
Easter Treats
Townhouse crackers
Peanut butter
White chocolate bark (melted)
Candy sticks
Food coloring of your choice
Sprinkles are optional but so cute!

Sandwich two crackers together using peanut butter and insert candy stick. Freeze them for about 30 minutes. Melt your white chocolate and add in food coloring. Dip your peanut butter crackers into melted white chocolate and decorate. These will be great for Easter but also gender reveals as well!
AP Chicken Street Corn 

In a baking dish, layer:
3 blocks of Philadelphia cream cheese
Tajin seasoning (to your liking; I went heavy with it!)
4 cans of Del Monte southwest corn (drained)
Seasonings (pepper, salt, cumin, etc.) I use Trader Joe’s Elote seasoning 
1 block of pepper jack cheese 

Cover with aluminum foil and bake at 350 degrees for 40 minutes mixing it together in the middle of baking time. While your corn bakes, shred a rotisserie chicken & make cornbread cakes. 

Layer on plate: 
Cornbread cake 
Baked street corn 
Shredded chicken 
Lime juice 
Black pepper 
Tajin seasoning 

AP Tip: For busy moms like myself who need to save time, you can add your corn ingredients in a crockpot to cook throughout the day.  You can also substitute Jiffy corn muffins for your cornbread cakes.

Sharing a hosting favorite! These ham rolls are so easy and great for bridal and baby showers or spring luncheons. 

1 lb. sliced cooked ham 
1 8 oz. block cream cheese 
Drained green olives

Spread cream cheese onto ham slices, add olives, then roll. Insert toothpicks to keep together
Sharing my pimento cheese recipe. For Easter, I like to use bunny-shaped cookie cutters for cute mini sandwiches. 

Ingredients:
8 oz sharp cheddar
4 oz pepperjack cheese
3.5 oz drained diced pimentos
1 tablespoon sugar
1 cup mayonnaise
Pepper (as desired)

Grate your cheeses - fresh grated cheese is the key to this recipe! Add in pimentos, sugar, mayo, and pepper then mix well.

Strawberry Bread
Strawberry cake mix (dry mix only) 
1 can of strawberry pie filling 
1 bag of white chocolate morsels 
Crisco or non-stick spray 
Powdered sugar (optional)
Pecans would also be great added in! 

Mix the first three ingredients together in your mixer. Spray your loaf pans & fill them. Place in the oven on 375 degrees for 20-25 minutes. I have found that taking them out a little early and allowing them to continue to cook in the pan until cool works best and prevents burning. Be sure and SAVE this recipe to try yourself. Granny’s Chicken Spaghetti 
4 cups of cooked & shredded chicken 
3/4 large box of Velveeta cheese (cubed) 
1 box of thin spaghetti noodles
4 tbsp butter 
1 medium onion 
1 can cream of chicken 
1 can cream of celery 
1 can cream of mushroom 
2 cans of rotel 
Salt
Pepper 
Garlic powder 
Minced garlic (fresh is better) 
Oregano 
Spices to your liking

Sauté medium chopped onion in butter until golden. Mix spices into the sautéed onion. In a large skillet, add 4 cups of the cooked shredded chicken (I like to use a fresh, warm rotisserie chicken), cubed Velveeta, seasoned sautéed onions, rotel cans (not drained), can of mushroom, celery & chicken soups. Add two large serving spoons of the starch water from your pasta. Blend it all together well and cook over medium until warm and melted. Drain your noodles and add them to the sauce mixture. Once blended well, fill two 9x12 baking dishes.  Bake on 375 degrees for 25 minutes or until bubbly. 

Tip: This dish is great to freeze one for later or serve a large crowd. It makes me think of my granny who would always prepare it for us. ENJOY ~XXAP

Sharing an easy hack for bananas 🍌 so you never waste them. Once frozen they taste so fresh and work better for blending shakes. 

Banana peanut butter & chocolate protein shake
1 frozen banana 
1 cup of Fairlife skim milk 
1.5 scoops of chocolate peanut butter protein
2 cups of ice 
(Optional fiber & seeds)

Drink immediately while icy and chilled.
Ingredients:
1 small carton cherry tomatoes
10 oz feta cheese block
3/4 cup olive oil
Salt and pepper as desired
1 lb. shrimp (can substitute chicken)
Old Bay seasoning (as desired)
12 oz pasta
1 cup shredded mozzarella
(I doubled this recipe)

Place feta cheese and cherry tomatoes in a baking dish. Pour olive oil, salt & pepper over them. Bake at 375 degrees for 15 minutes. Press the tomatoes to release the juices and blend well with the cheese. Boil noodles and drain. Grab your large wok and cook your shrimp with Old Bay seasoning (I like several teaspoons). Once the shrimp (or chicken) is done, add your feta bake and pasta to the wok. Mix well and top with mozzarella cheese. Place back in the oven for 5-7 minutes on 375 degrees until the cheese has melted.
I doubled the recipe and it made enough for 8+. Great served with corn on the cob or garden salad.

No Bake Valentine’s Treats

Save this easy treat I am sharing! Only a few ingredients and it’s a big hit. Perfect for gifting, classroom treats or home celebrations. 

Mix together: 
1 white chocolate plate (melted) 
Pink food coloring (4 drops) 
4 cups Kellogg’s Strawberry Milkshake Frosted Flakes cereal 
2 cups of red M&Ms 
2 cups of miniature marshmallows 

Mix together well. Spoon out on wax paper and let it sit until hardened (approximately 25 minutes). Enjoy & gift!#LTKHoliday
