My FAVE healthy recipe EVER!!!! SAVE this post to make later! This cauliflower rice is low calorie, has loads of plant based protein, and is packed with so many herbs and veggies! Plus the only dressing is lemon juice!!! You HAVE to try this. I was craving it yesterday so I used my Walmart+ membership to have groceries delivered from my local store for free*. Ingredients:
1 bag of cauliflower rice or 1 head of cauliflower)
½ Yellow onion
Butter
Fresh mint, cilantro, parsley
Sliced almonds
Dried cranberries
Edamame
1-2 lemons
How to Make:
Chopped Onion. Take leaves off herbs (discard stem)and chopped). Halve lemon(s) Cook edamame (I do per instructions in microwave). Saute onion in pot with butter until translucent. Add cauliflower rice and cook 1-2 mins until lightly cooked (doesn't need to be full cooked and shouldn't be). Take off heat and remove from hot pot into bowl. Add edamame, chopped herbs, cranberries, almonds and lemon juice to taste. Stirred ingredients together and then place in fridge for at least 1 hour. Serve and enjoy!
