GRANDMA GRIFFINS SODA BREAD
2 cups sifted flour
1/3 cup butter
3/4 tsp baking soda
3/4 tsp salt
1 tbsp sugar
1/4 cup golden or regular raisins
1/4 cup dried cranberries
3/4 cup buttermilk
Rinse the raisins and cranberries in hot water, drain well. Sift together the flour, baking soda, salt, and sugar. Cut butter into flour mixture until its pea sized. Stir in the raisins and cranberries. Add in buttermilk and stir just until dry ingredients are moistened(don’t over mix). Dough should be sticky. Place in a baking pan, pat or roll dough gently to shape. Bake at 375 for 28-30 min, more bake time may be required depending on your oven! Just don’t overcook or it will be really dry. Great by itself or with a little butter! Have leftovers? It’s great with coffee the next morning!
