Anytime, I find this giant bag of peeled garlic at Costco I immediately have to go home and make garlic confit!

Slowly cooking the garlic on low heat in this way draws out the sugar and caramelizes them making it taste amazing!

Garlic confit recipe
✨garlic
✨high quality evoo
✨rosemary
✨thyme
✨optional rep pepper flakes for spicy

Preheat oven to 275°F. Add enough oil to cover all your garlic then place herbs on top. Cover and bake for 2 hours. Separate the oil and the garlic and you can store both in the fridge for a week.

I use the garlic confit for lots of different things like pasta sauce, salad dressing, garlic aioli and more! The garlic oil can be used to sautee veggies or even to drizzly on top of salads.

But my absolute favorite way of feeding it is when it’s still fresh on top of some toasted bread and cold butter, then topped with flaky salt!

I made tomato tart in the past, but this time I decided to elevate it with the pistachio whipped feta and let me tell you, I could’ve eaten the entire thing by myself🙈.

Tomato Tarte with pistachio whipped feta
✨puff pastry
✨1 egg
✨pistachio whipped feta (recipe below)
✨tomatoes
✨chopped pistachios
✨salt and pepper
✨evoo
✨optional hot honey for drizzling

1. Preheat your oven to 400°F.
2. Spread the puff pastry on a baking sheet.
3. Score the pastry about an inch away from the edge to form a rectangle.
4. Lightly press a fork throughout the inner rectangle and cover in egg wash
5. Bake the pastry for 25-30 minutes, until fully cooked.
6. Remove the pastry from the oven and lightly press down the center with a spoon.
7. Spread whipped feta over the pressed pastry.
8. Layer tomato slices on top.
9. Add crushed pistachios, salt, and pepper.
10. Drizzle with olive oil and hot honey

Enjoy!

Pistachio whipped feta
✨8 oz feta
✨4 oz cream cheese
✨1 oz Parmesan cheese
✨1/4 cup pistachio
✨1 garlic
✨2 Tablespoons evoo
✨2 Tablespoons lemon juice (about 1 whole lemon)
✨1 Tablespoon honey
✨splash of milk (optional for thinner consistency)

Blend all ingredients in a food processor. If you’re using a blender you may need to use extra milk to thin it out. I def recommend using a food processor if you have it for a less runny consistency.

This is my new way of eating wraps! With the wrap alone, you are getting an additional 35 g of protein that doesn’t even count in your filling!

High protein, sun-dried, tomato cottage cheese wrap
✨1 cup full fat cottage cheese
✨2 eggs
✨1 clove of garlic
✨1 Tablespoon subs fried tomatoes in oil
✨onion salt
✨Trader joes Aglio Olio seasoning (or everything but the bagel seasoning)

1. Preheat your oven to 350°F.
2. Add all ingredients, except the Aglia olio seasoning, to a blender.
3. Blend for 30 seconds (do not over blend to avoid making it too runny).
4. Spray your baking sheet with nonstick spray.
5. Then Line the baking sheet with parchment paper.
6. Spray the parchment paper with nonstick spray.
7. Pour the batter onto the baking sheet in a thin layer and sprinkle with Aglio Olio seasoning
8. Bake at 350°F for 30 to 35 minutes.

Enjoy!

You can also make two smaller wraps, and save one for the next day, and just warm it up in the air fryer.

I always feel inspired to try new recipes and experiment with different flavors when I haven’t gone grocery shopping and I’m forced to use whatever is in my pantry! This turned out delicious!

Smoked Salmon Pasta
✨2 Tableapoons extra virgin olive oil
✨6 garlic cloves minced
✨1 teaspoon Calabrian chili peppers
✨1 teaspoon capers
✨juice and rind of 1 lemon
✨1 can smoked salmon (or any tin fish of choice)
✨1-2 Tablespoon of Cold butter
✨pasta of choice
✨Parmesan cheese

I know you’re going to be tempted to add salt to this dish but please try it first because tin fish is very salty!

1. Salt your water and cook your pasta al dente.
2. In a separate pan, heat olive oil on medium heat.
3. Add minced garlic and Calabrian chili peppers, sauté for about 2 minutes.
4. Add capers, salmon, lemon juice, and whole lemon rind; cook for another 2 minutes.
5. Lower the heat if the garlic browns too quickly.
6. Turn off the heat and add cooked pasta with a splash of pasta water and cold butter.
7. Stir until butter melts and a sauce forms.
8. Garnish with extra-virgin olive oil and Parmesan cheese.
9. Enjoy!

This is the easiest three ingredient pasta, let me know if you try it!

Broccoli pasta
✨stuffed tortellini (or any last of choice)
✨broccoli
✨garlic minced
✨evoo
✨fresh grated Parmesan cheese

1. Salt your water and bring it to a boil.
2. Cook your broccoli in the boiling water for 5 minutes.
3. In a separate pan, add enough olive oil to cook the whole pan.
4. Add garlic to the pan and sauté for about until fragrant.
5. Add the cooked broccoli to the pan and let it cook, untouched, for about 2 minutes.
6. Cook your pasta one minute less than al dente in the broccoli water, following the package instructions, or if using tortellini, cook it for one minute.
7. Once the pasta is cooked, add it to the broccoli mixture.
8. Add a splash of the pasta water and your Parmesan cheese to the pan.
9. Let it cook for another two minutes or until the pasta is fully cooked.
10. Taste for salt, and garnish with extra Parmesan cheese and hot chili flakes.
