Sharing my family’s carrot cake recipe! I am a cream cheese frosting fan account now. Since I made this recipe the other week I’ve been asked for the recipe twice. It’s THAT good! Make sure you save it for later! 🥕🍰

INGREDIENTS:

For the cake:
250ml sunflower oil
225g light muscovado sugar
3 large eggs
225g self-raising flour
Pinch of salt
1/2 teaspoon each of mixed spice, nutmeg and cinnamon
250g coarsely grated carrots
Handful of sultanas or chopped dates (soaked in brandy if you want to be fancy!)

For the frosting:
300g full-fat cream cheese
150g icing sugar
2 teaspoons cornflour
125ml double cream
8 pecans roughly chopped

METHOD:

1. Preheat the oven to 170℃ (fan-assisted), grease, and line two 7-inch baking tins.
2. Whisk together the oil and sugar, then beat in the eggs.
3. Sift in flour, add the spices and fold into the egg mixture.
4. Fold in the carrots and sultanas and mix well.
5. Divide the mixture into the two tins and bake for 30-40 mins.
6. Leave to cool in tins and make the frosting by lightly whipping the cream cheese until smooth, sieving in the icing sugar and cornflour and then beating to combine. Then add in the cream and beat until you have a spreadable consistency.
7. Assemble the cake and sprinkle over your chopped pecans.
