This is the epitome of the Afghan kitchen to me. Simple ingredients treated with kindness and respect. Not fancy, not extravagant, but completely satisfying.

Shorwa

2 tbs vegetable or olive oil
1 onion, sliced (about 1 cup)
4 cloves garlic, peeled
2 small tomatoes, chopped
2-3 tsp salt (2 tsp if you use broth, 3 if you use water)
1/2 tsp turmeric
1 tsp whole cumin seed
1 tsp ground coriander
1/2 tsp ground cumin
1/2 tsp black pepper
2 lbs bone in meat - beef or lamb
8 cups water or broth (I used a mixture of both)
3 carrots, cut into bite sized pieces
2 potatoes, peeled and cut into bite sized pieces. I used baby whole potatoes
1/2 Afghan naan, torn into bite sized pieces and put into a bowl

Heat the oil in a pressure cooker/instant pot. Add the onion and cook until lightly golden brown. Add garlic and stir for another minute. Add tomatoes, salt and spices and cook another minute or two until the kitchen is fragrant. Add the meat and stir it making sure that it gets completely covered in the onion spice mixture. You just want it to lose the raw color. Add the broth/water and cover. Cook on high for 30 minutes. Release the pressure, open and add the carrots and potatoes. Cover and cook on high pressure again for 10 minutes. Release the pressure. Meat should be falling off bone tender and veggies should be soft.

Take the meat out of the pot and put it into a serving platter. Pour the broth and veggies over the bread. Serve with chopped cilantro, green onions and I always love a pickled onion.

I am horrible at doing my prayers on time. I have the absolute best intentions I mean I will make wudu and then get distracted on the way to the prayer mat!! I get asked more about this food processor than anything else in my kitchen and I always warn people Its’s EXPENSIVE! But, you won’t have to buy another kitchen appliance to chop, knead, slice or dice this food processor does it all. And it’s sturdy so you won’t have to buy another one in a few years. You can probably give this to your kids it’s that well made. Comes with lots of chopping blades and it’s easy to clean.
