A sweet treat packed with hidden veggies! ✨ Ingredients: ✔ 2 cups sugar ✔ 1 cup coconut oil ✔ 3 eggs ✔ 2 cups flour (half white, half whole wheat) ✔ 1 heaping tsp cinnamon ✔ ½ tsp salt ✔ 1 tsp baking soda ✔ 1 tsp baking powder ✔ 1 cup grated zucchini ✔ 1 cup grated apple ✔ ½ cup carrot baby food ✨ Cream Cheese Frosting: ✔ 3 oz cream cheese (softened) ✔ ½ cup butter ✔ 1 tsp milk ✔ 2 cups powdered sugar 🌀 Instructions: 1️⃣ Beat oil and sugar together, then mix in eggs. 2️⃣ Add dry ingredients and mix until combined. 3️⃣ Fold in zucchini, apple, and carrot baby food. 4️⃣ Bake at 350°F – 25-30 min for a cake or 15-20 min for cupcakes.
