I needed something quick, high protein, and still giving soft life dinner… so I threw this together and baby… this one stayed on the plate, no leftovers 😭

Light, creamy, packed with flavor, and still fits my goals. This is one of those meals you make once and it becomes a weekly thing.

Everything I used is from Target, so it was easy to grab and go.

My Jamaican husband is 1,338 miles away but still managed to micromanage my curry chicken tonight 😅

Every. Single. Step.

“Not enough seasoning.” “You’re cutting it wrong.”
“No no no, MORE curry powder.”

But I’ll admit… he was right. This came out perfect.

But here’s the secret: I used actual curry powder straight from Jamaica, my new @amazon knife set made the prep SO much easier, and I finished mine with @gracefoods ketchup because I’m fully addicted at this point 😅

Now the real question: Should I share his actual recipe or keep it in the family? 👀

Oh, and I swapped white rice for cauliflower rice to be a little healthier. He had thoughts about that too 💀

Houston showed up tonight. The weather was perfect, the lights were glowing, and the vibes were lit from the moment we walked in.

Girls night at the Houston Rodeo turned into one of those nights you wish you could replay. Lizzo put on a hell of a show and the crowd lost it when she brought out Slim Thug, Mike Jones, and Paul Wall. Houston legends on the stage. The whole stadium was going crazy.

Boots on, music loud, and memories made with my girls. Rodeo nights in Houston never disappoint.

Blueberries for dinner tonight.

Some nights in a long distance marriage you cook a full meal. Other nights you want something quick, light, and high protein while you’re winding down the day alone.

I threw blueberries and protein into my @ninjakitchen blender and dinner was done in seconds. Easy cleanup, quick blend, and still hit my protein goal.

This is one of my favorite quick meals on nights when I want something simple but still filling.

Dad is coming in a few hours and my “content room” had to turn into a real guest bedroom FAST 😅

This 100lb sleeper sofa showed up and yes… I carried it upstairs by myself.
