This has been my GO TO LUNCH! On Sundays I will literally take the time to roast everything and prepare it for the week. This makes my week so much easier and helps me stay on track. This week, I roasted sweet potatoes, zucchini, broccoli, cauliflower, chickpeas. Then I drained some black beans. I am experimenting with different dressings. I simply mixed, maple syrup, Sriracha, and a little bit of mayonnaise! My favorite thing about these kind of bowl is experimenting with different flavors. So you could totally add lime or opt out of the maple syrup then put Tabasco or hot sauce. The sky is the limit!
