I had been looking for hatch chiles (unsuccessfully) for a while and I was sooo happy when I found some yesterday at Trader Joe's. This is the soup of my DREAMS. It's delicate, full of flavour, creamy, cozy, has texture, and just a mild hint of spice. I opted for the mild hatch chiles but you could totally go bold with the hot ones!

Chorizo Sheet Pan Tacos with Charred Veggies and Jalapeño Garlic Crema

I've made a variety of different sheet pan taco recipes and these ones are top two for sure. The crema!! And the charred veggies add so much depth along with the chorizo. They get sooo nice and crispy in the oven after brushing with olive oil and covering with cheese.

Chicken Sliders with Cowboy Butter 🤠🧈🍔

I can’t get over how easy these are to make! These are great for a weeknight dinner when you only have 30 minutes, a game day or having friends over. I can pretty much guarantee you they’re going to be devoured quickly.

The cowboy butter is soooo tasty - some of that gets mixed in with the shredded rotisserie chicken, then some is brushed on top of the rolls, and save the rest for dipping!

Lemon Chicken Florentine Meatballs with Couscous 🍋

This recipe has been in my head for a long time but l've been fine tuning it and switching things up to try and make it perfect.

It's one of those dishes that tastes like it must be complicated to make but it's truly SO EASY. The chicken florentine meatballs are soo tender and packed with flavour, the couscous is so creamy (even though there's no cream), and the roasted tomatoes just burst in your mouth.

It's well balanced, it's healthy, it's fun to make, and leftovers are just as good the next day.
