Okay… these might be my new favorite clean dessert 😍
They look like those gorgeous Dubai chocolates (hi, pistachio moment 💚) — but they’re not the same recipe at all. Just a fun, clean-ingredient version that gives the same energy without the luxury price tag.

Flattened dates → peanut butter → melted chocolate → a sprinkle of pistachios.
Simple, crunchy, chewy, sweet, and made with ingredients you already have in your kitchen.

What started as the cutest little 36-hour Disney getaway turned very quickly into… well… not that. 😅 We were so excited heading up, I had a tiny sore throat, Ax had a tiny runny nose, but vibes were high and we were rolling with it. Checked into Shades of Green, soaked in the Christmas décor, let Ax run wild at the splash pad, grabbed snacks, and headed to Disney Springs thinking the night was just getting started.
And then… watching Ax eat, I knew I was not about to be okay. You know that feeling? The cold sweat. The dizziness. The “oh no… not now… not HERE.” I couldn’t eat. I couldn’t talk. I was just trying to hold it together because @linzspiration and I were FINALLY supposed to meet in real life. Of course the universe said, “Actually… no you’re not.” 😂
We left the restaurant, and even though I was spiraling, we still had 50 minutes before the shuttle came regardless of what was about to happen. So we started heading toward the exit, texting Linz to RUN. She grabs her kids’ hands and starts sprinting toward us, and in the three minutes of that little jog… I was done. Like DONE done. The sickness hit full force. And let’s just say—it continued alllll the way until about 1 AM. Before the bus ride, on the bus ride, and back in the hotel. Pure survival mode.
Thank goodness for my parents—my mom helping me off the floor, my dad staying up making sure Ax didn’t roll off the bed because rebel boy refused the pack-n-play. Then came the 4 AM wake-up call from Ax, which led to him eating seaweed at 5 AM while I tried to keep myself upright. And that’s when we packed it all up and headed home. The vomiting finally stopped, but the sickness definitely didn’t… which leads directly into the next story.
Stay tuned for the home cabinet drama… because of course chaos doesn’t just end. 😅

Come pack with me for what I thought was going to be a fun 36-hour trip to the happiest place on earth… except spoiler alert: it was anything but that. 🤦‍♀️✨

My parents had one day left on their Disney tickets from our trip back in January, so we snagged me a ticket, booked the hotel, packed up the car and hit the road. I had a tiny sore throat but was spraying my bee propolis every five seconds, fully convinced I’d be fine. Ax had a little runny nose but was totally himself — and we’d already spent the money and couldn’t get it back — so we decided to go for it.
