Remove from heat, toss in a handful of mint, cover, and let it steep for 15–20 min. Strain and set aside. Now for the fun part—into your @vitamix goes the ice, wine, elderflower liqueur, mint syrup, and lime juice. Blend until you’ve got a dreamy slush. Add more ice if it’s too thin, or more wine if it’s too thick (no wrong answers here). Pour into glasses, top with bubbly prosecco, and garnish with mint and a lime wheel.
