There will be no “fishing” for compliments when you arrive with this impressive Ducktrap Smoke Roasted Atlantic Salmon and fingerling potato salad—it’s so easy to make (and no cooking required for the salmon!). Although it’s no big “dill” if you just make it for yourself. Ingredients: • 2 portions (8 oz total) Ducktrap Smoke Roasted Atlantic Salmon, flaked • 2 lbs fingerling potatoes, halved • 2 tbsp kosher salt (for boiling) • 2 tbsp chopped dill • 3 scallions, thinly sliced • 1 tbsp nonpareil capers, drained Vinaigrette: • 1½ tbsp Dijon mustard • ¼ cup red wine vinegar • 1 tsp sugar • 1 tsp salt • ¾ cup olive oil Cook fingerlings in salted water until tender (about 10 min), drain, and cool. Whisk all vinaigrette ingredients until smooth. Toss potatoes with vinaigrette, dill, scallions, and capers. Gently fold in salmon. Serve chilled or at room temp. Enjoy!
