How can a healthy donut be this good?

My exact thoughts as I bit into this bad boy for the first time. SO GOOD 🍩

It’s gluten free, dairy free, refined sugar free, and you can make it grain free if you use a mix of gf flours like coconut and almond.

My husband, who has no dietary restrictions and enjoys a flour/butter/sugar filled donut himself, devoured 2 of these before I could blink.

If you have gluten, dairy or sugar restrictions, you eat anti-inflammatory, or you just prefer to eat clean, these are for you!

INGREDIENTS:
1 cup of gf 1 for 1 flour (I used King Arthur)
1/4 cup cacao powder
1/2 cup coconut sugar
1/2 cup milk (I used pecan)
3 tbsp melted coconut oil
1 egg
1 tsp vanilla
1 tsp baking powder
Pinch of salt
1/4 cup chocolate chips (I used Guittard)
1 tsp coconut oil

Preheat your oven to 350. Grease your donut pan with coconut oil. 

Mix together the coconut oil, egg, vanilla, sugar, and milk. Then add the flour, cacao, baking powder and salt. Mix until combined.

Put the mixture into a ziplock bag (or piping bag if you’re fancy). Cut the corner off the bag (about 1 inch) so you can pipe out the dough into the donut pan evenly.

Once your dough is piped. Bake for 14 min, or until a toothpick comes out clean.

Let the donuts cool out of the pan for about 10 min before dipping in your chocolate icing.

To make the chocolate icing, put 1/4 cup chocolate chips and a tsp of coconut oil into a bowl and microwave for 1 min until melted.

Stir icing until even, dip your donuts and let cool for a further 10 min.

Did you know most commercial nut milks have weird fillers and gums?

I’m talking seed oils, guar/xantham gum, emulsifiers, and sugars.

Some even advertise themselves as “pasteurized,” as if they need to be heated to kill off bacteria?!

Milks made with plants have no bacteria that need to be pasteurized. Only milks that come from animals do. And some might even argue that point.

When I didn’t read/understand ingredient labels, I used to think nuts hurt my tummy because every time I had nut milk I’d get an upset stomach.

Then I realized it was the junk I was ingesting IN the nut milk, not the nuts themselves, that made me feel unwell.

Enter: my homemade nut milk era

I’m OBSESSED with my homemade milks and creamers. 

After experimenting with almond, cashew, pecan, and walnut, I can confidently say pecan milk is my all time favorite. The flavor. The creaminess. It’s a winner.

I do love a cashew creamer tho as a heavy cream substitute. 👀

I get all my nuts at Costco. It’s $15 for a massive bag that I go through in about 2 months. Definitely saving money by homemaking my milks too.

Do yourself a favor and look into homemaking your nut milk too. Whether it’s with an almond cow, a nutr, or even a cheese cloth. It’s better for you and your gut.

If you don’t like oats, you’ve probably haven’t had them like this. Oats without flavor can be bland and a weird texture. Pinky promise 🤙 that you’ll absolutely fall in love when you do oats right.

Pour in this super simple 3 ingredient mocktail.

Fill 1/4 of the glass with ginger beer.
Fill the rest of the glass with you @gardenofflavor juice.
Squeeze a little fresh lime juice on top.
Garnish with lime wedges and dried rose petals.

All your champagne drinking family will be jealous 😉

For those of you in your teens or twenties, your thirties shouldn’t be so scary! You can still have fun, do what you want, but you’ll also probably be making more money and can splurge on a few things for yourself.
That’s how it’s going in my 30s at least. I had always dreamed of a decked out kitchen, with Anthropologie like dishware and decor. Now that I’m making a bit more money and own my own home, I’m starting to piece together all the things I’ve been dreaming of.
