My original recipes

 Chai Sugar Cookies

Ingredients:

½ cup unsalted butter (softened)

½ cup canola oil

1 Chai tea bag 

1 egg           

½ cup sugar (plus a little extra for the topping)

½ cup powdered sugar

2 cups of flour

½ teaspoon baking soda

2 teaspoons of vanilla extract

¼ teaspoon salt

¼ cup pecans or walnuts (optional)

 

 

  Beat the butter then add the oil. Add the powdered sugar, sugar, egg, vanilla

Stir in the flour, baking soda, salt, tea

 

Chill the soft dough for 1 hour

 

Line cookie sheet with 12 tablespoons of the dough balls, press the dough then cover the cookies with sugar.

 

Bake 9-10 minutes at 350
Chile verde 


Chopped onion
Pork shoulder
Garlic clove
Salt
Pepper 
Cumin
1 can of green chiles
Olive oil
Chicken stock or water 

Brown the meat in the pot (Dutch oven or crock pot) with garlic, onion, salt, pepper, cumin. Poke the meat with a fork the whole time. Once the meat is brown add the can of green chiles, add chicken stock or water. Cover and let cook for 3-4 hours until the meat falls off the bone

Mexican Wedding Cakes (Russian Tea Cakes)

Ingredients:

1 cup butter, softened

1 tsp vanilla extract

2- ¼ cup flour

¼ tsp salt                   

¼ cup pecans or walnuts (optional)

1/2 cup powdered sugar

Pre heat oven at 400 degrees

 

Mix butter, powdered sugar and vanilla. Cream together. Work in flour, salt, pecans until dough holds together. Shape into 1 inch balls and place onto baking sheet 1 inch apart.

Bake 10 minutes, or until set but not brown, while warm roll into the powdered sugar

Blini recipe

1- cup flour
1/2 teaspoon baking powder
3/4 + 2 tbsp milk
3/4 teaspoon salt
1- egg
1- tbsp melted butter
Kahlua Cake

1/2 chopped pecans
1 German Chocolate cake mix
1( 3.9 ounce) chocolate instant pudding mix
1/2 cup water
1/2 cup vegetable oil
4 large eggs
½ cup Kahlua


Kahlua topping (make after cake is done baking)

1/2 cup butter
1 cup sugar
1/4 cup Kahlua
1/4 cup water

in a medium pan combine all ingredients bring to a boil over medium heat; boil for 2 minutes, stirring often

Cake directions: 

Preheat oven to 350, Grease and flour a 10 inch Bundt pan. Sprinkle chopped pecans evenly over bottom of pan and set aside. 

In a large bowl combine cake mix and pudding mix. Add water, oil, liquor, and eggs. Beat at medium speed
with an electric mixer until smooth. Pour in prepared pan and bake 45 minutes. 

Carefully pour hot Kahlua topping over cake and let it stand in the Bundt pan for 4 hours. 

Flip cake onto platter and enjoy...Serve with whipped cream.

Lauryn’s Espresso martini

1 shot of vodka 
1 shot Kahlua 
1 shot of baileys
1 espresso shot

Combine ingredients in a shaker with ice, pour in an espresso glass.

My award winning enchiladas 

Combine the shredded chicken, green chiles, cream cheese, 1/2 cup cheese, and 1/4 cup of enchilada sauce in a mixing bowl, mix well. 

Take a spoon and roll up the enchilada mix into the individual softened corn tortillas
Lay them all into the glass baking dish
Cover with the rest of the enchilada sauce
Cover with cheese 

Add foil to the top of the dish Bake at 350 for 45 minutes

Take the foil off then bake another 10 minutes 

Wait 10 minutes to serve

In honor of my mother and Dia Del Los Muertos I made her pumpkin bars with my own upgrades 💀😀

Pumpkin bars 
4 eggs
1 2/3 cup sugar
1 cup vegetable oil
15 oz canned pumpkin
2 cups flour
2 tsp baking powder
1 tsp cinnamon 
1 tsp pumpkin spice
1 tsp salt
1 tsp baking soda

Frosting: 
2 cups powdered sugar
8 oz cream cheese 
1 tsp vanilla extract
1/2 cup butter 

Mix oil, eggs, sugar, pumpkin together until light and fluffy

Mix dry ingredients together, flour, cinnamon, pumpkin spice, salt, baking powder, baking soda, 

Combine the ingredients bake in a 9x13 dish at 350 for 30 minutes. 

Frosting: mix softened butter, and cream cheese together until smooth, add powdered sugar and vanilla, mix together

Lauryn’s pumpkin spice Banana bread

1 1/2 tsp vanilla
2 or 3 bananas super ripe 
Pinch of salt
1 1/2 cup of flour
3/4 cups sugar
1/2 tsp baking soda
1/3 cup melted butter
1 egg
Dash of cinnamon 

Pumpkin spice 
1 1/2 tsp pumpkin spice 

Chocolate chips optional 
Mush the banana and add melted butter first. Add beaten egg. Add the rest bake at 350 for about 20 minutes.
