50 CALORIE FUDGE BROWNIES

For more low calorie recipes go to the top of my page and grab THE HAPPY HEALTHY AND HOT COOKBOOK

2 cups baked sweet potato
4 eggs
1 teaspoon vanilla extract
1 cup unsweetened cocoa powder
2 tablespoons powdered espresso
1 cup granulated monk fruit

Bake sweet potatoes in their jackets well ahead of time. Let them cool and skin will come off easily. Measure 2 cups of sweet potato (and enjoy any leftovers as a yummy side dish!)

Put sweet potato, eggs and vanilla in blender and blend until smooth. Pour into bowl and stir in remaining ingredients until thoroughly combined.

Scrape into and 8x8 inch pan- can be lightly greased or lined with parchment and bake at 350 for 35 minutes or until set in the middle. They will firm up as they cook but will remain very moist and fudgey.

Let cool and cut into 16 pieces, Store leftovers in the fridge. I think the taste and texture improve after spending time in the fridge.

Each brownie has around 50 calories (and is packed with nutrients from the sweet potato and eggs!)

Quick tutorial- just did this while watching the Eras tour with Tyson snoring by my side. It couldn’t be easier and this polish is soooo forgiving. The brush makes it super easy to apply!

Definitely think my daily collagen consumption kept my nails healthy even with the years of dip polish.

TWO INGREDIENT 60 CALORIE EGG BITES

8 eggs
1 cup 2% cottage cheese
salt and pepper

Blend all ingredients until smooth and pour into 12 parchment lined muffin tins. Bake at 350 for 20 minutes. For the best texture set the muffin tin in a larger pan with a bit of water.

You can customize these with anything you like- chopped veggies, shredded cheese, a bit of salsa- but they’re delicious on their own as well.

Makes 12 egg bites, each has 60 calories and 6 grams of protein.

CHEESEBURGER EGG BAKE- 31 grams protein, 260 calories

1/2 yellow or white onion, diced
1 pound extra lean ground beef
8 eggs
1 cup 2% cottage cheese
1 diced Roma tomato
1/2 cup shredded mild cheddar
salt and pepper

Preheat oven to 350. Line an 8x8 inch baking pan with parchment.

Lightly spray a large pan with avocado oil and sauté onion until it starts to soften. Add ground beef, season with salt and pepper and cook until fully done.

Meanwhile combine eggs and cottage cheese and blend until completely smooth.

When beef is cooked spread evenly over the bottom of baking dish and pour egg mixture over it. Top with diced tomato and shredded cheddar and additional salt and pepper.

Bake at 350 for 35 minutes or until lightly browned and set in the center. Cut into 6 pieces. Tastes great hot or cold!

A study of more than 1600 people showed that those who kept a food log lost TWICE AS MUCH WEIGHT as those who didn’t!

You don’t have to rigidly track macros (I have clients who have lost over 25 pounds and never tracked a single macro.)

Tracking protein and calories CAN be helpful and is what I personally do.

But it’s mostly about holding yourself accountable and noticing patterns, which you then have the power to change. (For example, if you find yourself overeating when you are sleep deprived, you may need to look at why you’re not sleeping.)

As always- I’d love to hear your thoughts. If what you’re doing now is working then keep doing it!

“BIKINI FRIENDLY”FRENCH ONION DIP
10 grams protein, 80 calories

For one serving:

1/2 cup plain Greek yogurt (I used 2%)

onion salt- I use Redmond

1 teaspoon dehydrated onions (optional)

Combine in a small bowl- use the onion salt to taste (I go pretty heavy!) Tastes best if it sits in the fridge for a bit to let the flavors mingle.

Enjoy with raw veggies or whatever you like. Also makes an amazing topping for burgers!
