And somehow, there was rice everywhere. But that is the beautiful thing about inviting children into the kitchen. Today we made easy Safe Catch Tuna & Veggie Sushi Rolls with creamy tuna, avocado, cucumber and carrots. š„ INGREDIENTS ⢠1 can Safe Catch No Salt Added Wild Albacore Tuna ⢠1½ tbsp mayonnaise ⢠1 tsp coconut aminos ⢠½ tsp rice vinegar ⢠2 cups cooked sushi rice ⢠1 tbsp rice vinegar for the rice ⢠4 nori seaweed sheets ⢠½ avocado, thinly sliced ⢠½ cucumber, cut into strips ⢠1 small carrot, cut into strips š£ DIRECTIONS Gently fold one tablespoon of rice vinegar into the warm sushi rice and allow it to cool. Flake the tuna and combine it with the mayonnaise, coconut aminos and ½ teaspoon of rice vinegar. Place one sheet of nori shiny side down. Using slightly damp hands, press a thin layer of rice over the nori, leaving a small border at the top. Arrange the tuna, cucumber, avocado and carrots across the lower third. Roll tightly with a bamboo mat or parchment paper. Let the roll rest seamside down for one minute. Slice with a sharp, damp knife and serve with coconut aminos for dipping.
