My Grandma's simple, delicious, low carb quiche (Family Size) Ingredients: 5 - 5.5oz Parmesan cheese 8oz Mozzarella (pre-shredded) 8oz Sheep's milk feta cheese 16oz Frozen chopped spinach x8 eggs Seasoning: Black Pepper, Sea Salt, Smoked Paprika, Oregano, Garlic Powder Instructions: 1. Preheat oven to 350°. Defrost and drain the frozen spinach in a large bowl. Once spinach is malleable, crumble feta cheese and combine with the spinach. 2. Add mozzarella and parmesan to the mixture. Season with Black Pepper, Sea Salt, Smoked Paprika, Oregano, Garlic Powder. 3. Add a splash of the feta cheese brine, add in the eggs, then massage until everything is evenly combined. 4. Oil your baking pan. After patting the quiche mixture flat, sprinkle a generous layer of mozzarella and parmesan on top. 5. Bake for around 30 minutes or until cheese topping is golden brown and crispy under 350° heat. Tip: play around with cheese amount. Can use more or less depending on how cheesy you want it!
