Reasons you should make your own mayo: 1. It's easy 2. Simple and clean ingredients unlike most store bought 3. ITS EASY! Just 6 simple ingredients you probably already have at home. Mayo is one of the easiest things you can make from scratch. Having an immersion blender is a plus. You can also use a food processor for a slightly different method but this one is far easier IMO. INGREDIENTS: * 1 large egg room temp * 1 teaspoon Dijon mustard * 1 teaspoon apple cider vinegar or lemon juice * 1/4 tsp honey (add more if you like a sweeter mayo) * 1/2 teaspoon sea salt, plus more to taste * 1 cup avocado oil INSTRUCTIONS: 1. Add all ingredients to a wide mouth mason jar (in order) 2. Place the immersion blender over the egg yolk all the way at the bottom of the jar. Make sure blender is off while doing this. (You don't want watery mayo.) 3. Turn immersion blender on making sure to leave it at the bottom of the jar for about 30-45 seconds. (Very important again we don't want runny mayo.) 4. Once the bottom begins to look like mayo, start to very slowly lift the immersion blender. (Be patient with it. Going too fast can ruin the consistency of the mayo.) 5.
