This lemon chicken orzo soup is perfect for chilly nights, easy weeknight dinners, or when you want something nourishing that everyone actually loves. Ingredients: 2 tbsp olive oil 3 carrots, diced 3 celery stalks, diced ½ medium onion, diced 6 garlic cloves, minced 2 tbsp all-purpose flour 8 cups chicken broth 1 tbsp Italian seasoning 1½ lbs boneless, skinless chicken breasts 1 cup dry orzo pasta Large handful of fresh spinach Salt & black pepper, to taste For finishing: Lemon juice & lemon zest Fresh dill, chopped Freshly grated Parmesan Instructions: Heat olive oil in a large pot. Sauté carrots, celery, and onion until softened. Stir in garlic and flour, then slowly add broth and seasonings. Add chicken and simmer until cooked through.
