Cozy Caramelized Onion Pasta 🍝✨ This pasta is packed with slow-cooked flavor but super simple to throw together—perfect for a cozy night in. Made with pantry staples and a splash of cream (no heavy sauce needed), it’s rich, a little sweet from the onions, and finished with lemon + herbs for balance.

Everything I used is linked below—including the protein pasta, microplane grater, braiser cast iron pan, linen napkins, and my everyday plates.

✨ Ingredients: – 4 yellow onions, thinly sliced – 4 garlic cloves, minced – ¼ cup oil-packed sun-dried tomatoes, chopped – ½ cup chopped spinach – ¼ cup chopped fresh parsley – Splash of heavy cream (~2–3 tbsp) – Juice of ½ lemon – Salt + pepper, to taste – Cooked pasta (I used protein pasta!) – Reserved pasta water – Olive oil + optional pat of butter – Optional: grated parmesan for topping
✨ Instructions:
1. Caramelize onions low + slow (~30 mins) in olive oil (and butter if using) until golden and jammy.
2. Add garlic + sun-dried tomatoes. Cook 1–2 mins.
3. Stir in spinach + parsley; let wilt.
4. Add splash of cream + a bit of pasta water. Season with salt + pepper.
5. Toss in cooked pasta, add more pasta water as needed to coat.
7. Finish with lemon juice + parm if you’d like.

It’s lightened-up, cozy, and comes together in one pan.
