The heart shaped ribeye is all the rage right now on the social so I decided to give this a try! I got this bone in ribeye roast over Christmas for really cheap so I thought it out yesterday and then cut off a nice big chunk. All you do is cut almost all the way through the steak and then fold it out like a butterfly and then trim it to get it into the heart shape. I used my MEATER meat thermometer to make sure that we got the perfect temperature and fry this up in our cast-iron pan in tallow. Day 14 of 14 sardine fasting, finally done! Down to 149.4. As far as exercise, I walked, did some strength training, stairmaster, steam room, and hot tub. I ate 3 cans of sardines, some shrimp, and some air fried canned sardines. My average glucose was 88. I got my DEXA scan and I will be getting my final bloodwork in a couple of days. I also picked up my 24 hour urine arsenic test and I will be doing that after 2 to 3 days of not eating sardines.

But by the afternoon I was feeling better so I hit the steam room and hot tub. No exercise. Today’s sardine recipe is sardines and eggs:

2 cans sardines
1 tbsp butter
2 large eggs
Sprinkle of garlic powder, salt, & pepper

1. Heat butter in medium sized frying pan
2. Add sardines and cook for several minutes, moving them around the pan
3. Add eggs and scramble together with the sardines
4. Add salt and spices
5. After about 3-5 minutes of cooking, remove from heat and allow to cool for a couple minutes before eating

Today’s recipe is Carnivore air fried canned sardines:

2 cans wild planet sardines
1 large egg
1/2 cup finely grated pecorino Romano or Parmesan Reggiano cheese
1/2 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp white pepper

1. Crack an egg on a small side dish and mix the yolk in the white together.
2. Place the grated cheese and spices onto another side plate and thoroughly mix
3. Open two cans of sardines and remove the sardines from the can, being delicate, so that the fish don’t break apart
4. Dip each fish in the egg mix and then roll it in the cheese and spice mixture until thoroughly covered and set on a dry plate
5. Once all the fish are covered in the egg cheese mixture, placed the fish into your air fryer and set air fry mode at 400°F for 10 minutes
6. Flip the sardines at least one time so that all sides become crispy
7. Removed from the air fryer and place into a bowl or on a plate and allowed to cool for a few minutes.
8. These crispy sardines can be served with a side of Dijon mustard or spicy horseradish Dijon mustard or whatever dipping sauce you prefer.

Holy smokes did this recipe turn out great! Make this AMAZING Carnivore quesadilla for yourself:

Carnivore flatbread:
1 cup shredded whole milk mozzarella cheese (skim will not work)
1 cup high fat greek yogurt
3 eggs

1. Preheat oven to 425 degrees F.
2. Mix ingredients.
3. Line a baking pan with parchment paper or a silicone baking mat and pour the mixture onto it.
4. Bake for 20 minutes.

Carnivore Quesadilla
1 Carnivore Flatbread
1 cup shredded whole milk mozzarella
1/2 cup cooked chorizo
1/2 cup shredded rotisserie chicken

1. Preheat oven to 350 degrees F.
2. Flip Carnivore flatbread over on the baking sheet and layer the cheese, chicken, and chorizo on one half. Flip the other half of the quesadilla onto itself.
3. Bake for 10-13 minutes or until the cheese is melty. Cut and enjoy!

We’ve spent the last few days organizing little pieces of the house. I straightened up the kitchen island and moved the Nespresso over to where the Keurig used to be because we are loving it and it is our new exclusive coffee maker. We also organized this cute little area for the boys’ shoes and coats. And then we cleaned up the boys room a little bit and moved some furniture around.

This weekend we did so many different activities and it was go go go. First we made a stop at a local antique/flea market and then we headed to my nieces graduation party, she just earned her associates degree. The next day we headed over to the south side of Chicago for a Serbian folklore dance, graduation and surprise retirement party for Goran‘s former folklore dance teacher. It was a great weekend!

Let’s make a carnivore taco bowl! First, brown a pound of 80/20 ground beef. Next, let’s make our own taco seasoning. I like to do this because then I can control the quality of the seasonings I’m adding. 1 tbsp cumin, 1 tbsp smoked paprika, 1/2 tbsp garlic powder, 1 tbsp onion powder, 1 tsp salt, 1 tsp pepper, 1 tbsp chili powder. Mix the seasonings together. After the beef is fully cooked, add the seasoning to taste. I probably added five or 6 teaspoons. Then add in a bit of water and mix thoroughly. The taco meat is finished, so put that into a bowl. Then, add your toppings! I follow a carnivore diet, so I added about 3 tablespoons of sour cream and some grated cheddar. If you are eating plants, you could add cilantro, onion, jalapeño, really anything you want to add. Finally, enjoy!

Happy Lamb is a carnivore friendly restaurant on North Clark St. in Chicago. This Chinese hot pot restaurant is super affordable and delicious! We went on my birthday, and did the AYCE. We did the half and half broth with spicy and original and then ordered a ton of different meats. First round was the marbled lamb in red wine sauce, ribeye, and garlic beef, and beef short plate. The meat is sliced super thin and you cook it yourself within a few seconds in the hot broth. We ended up doing three rounds of meat and we were stuffed afterwards. The bill came out to $59 because you eat free on your birthday, just show ID. On a side note, it gets super steamy in here, so if your hair frizzes easily, I recommend wearing it up when you visit.
