Lasagna Skillet. One pan, no prep, and half the effort—yes please. After a full day of summer mom-ing (read: sunscreen reapplying, snack refilling, and being the designated pool float inflator), I somehow agreed to make lasagna. Well technically, Bug picked dinner and who am I to deny this child their lasagna dreams? Shout out to my neighbor for dropping off a super sweet gift basket for me and one for the kids, farm fresh eggs make everything more delicious! This skillet version hits all the same cozy notes but comes together fast and easy—which is all I have the energy for right now. Grateful, tired, fed. That’s the vibe.

Yesterday was my birthday so it called for Ice cream for breakfast? Absolutely. Except it’s technically frozen yogurt I made in the Ninja Creami—but let’s not ruin the magic. The kids think I’m the coolest mom on the block, and I’m not about to correct them. It’s probiotic-packed, protein-optional, and summer morning approved. 10/10 recommend tricking your kids with healthy-ish breakfast disguised as dessert.
