If you’re looking for a cozy, fall recipe, this is it!! I double everything to make 2 because my family loves it so much, but if you just want one, follow the directions as follows:

Ingredients
• 1 box refrigerated Pie Crusts (2, softened as directed)
• ⅓ cup butter (or margarine)

• ⅓ cup all‑purpose flour
• ½ tsp salt
• ¼ tsp pepper
• 1 ¾ cups Chicken Broth
• ½ cup milk (2% or higher fat for a richer sauce)
• 2 ½ cups shredded cooked chicken or turkey (I use rotisserie chicken )
• 2 cups frozen mixed vegetables, thawed

Directions
1. Prep the crusts: Let pie crusts soften for about 15 minutes on counter. Unroll one and press it into the bottom and sides of a pie plate.
2. Make the filling:
• Melt butter in a saucepan.
• Stir in flour, salt & pepper to form a roux.
• Gradually whisk in chicken broth and milk, whisking until smooth and thickened.
3. Stir in the shredded chicken (or turkey) and thawed veggies until well coated.
4. Assemble: Pour filling into the bottom crust; top with the second crust. Seal and flute the edges, then cut slits in the top for steam.
5. Bake:
• Bake uncovered for the first 15 minutes (to develop color), then cover the crust edge with foil to prevent over-browning.
• Continue baking until golden and bubbly, about 45 minutes
