For the second outfit, I’m wearing a 4 in the sweater and 2 in the tights. Recipes: Balsamic Roasted Brussels Sprouts with Crispy Turkey Bacon Ingredients • 1 lb brussels sprouts, trimmed + halved • 3–4 strips turkey bacon, chopped • 2–3 tbsp olive oil • Salt + pepper • 1–2 tbsp balsamic glaze (store-bought or homemade) • Optional: red pepper flakes or parmesan Instructions 1. Prep the brussels Toss halved brussels with olive oil, salt, and pepper. Spread on a baking sheet cut-side down. 2. Roast Roast at 400°F for 20–25 minutes, until deep golden and crispy on the edges. 3. Crisp the turkey bacon While brussels are roasting, cook the turkey bacon in a pan until crispy. Roughly chop or crumble. 4. Finish Remove brussels from the oven, drizzle with balsamic glaze, toss lightly, then top with crispy turkey bacon. Garlic & Herb Boursin Mashed Potatoes Ingredients • 2 lbs russet or Yukon gold potatoes, peeled + cut into chunks • 1 pack Boursin Garlic & Fine Herbs cheese (5.2 oz) • 4 tbsp butter • ½–¾ cup milk • Salt + pepper to taste • Optional: chopped chives ⸻ Instructions 1. Boil the potatoes Add potatoes to a pot of salted water. Boil until fork-tender, about 15–18 minutes. 2. Make the Boursin mixture separately In a small saucepan, add the milk, butter, and the whole block of Boursin. Warm it over low heat, stirring until everything melts together into a creamy sauce. This makes the potatoes EXTRA smooth. 3. Drain + steam dry Drain the potatoes and let them sit in the hot pot for 1–2 minutes to get rid of excess moisture. 4. Combine and mash Pour the warm Boursin milk mixture over the potatoes and mash until smooth and creamy. Add more milk if you want it fluffier. 5. Season well Taste your food and season with salt and pepper to your liking. Add chives on top if you want that cute little pop of green. LTKHoliday LTKfoodie LTKPlusSize
