Thick & Creamy Cheddar Potato Soup 🥔🧀 Ingredients -½ stick butter -1 white or yellow onion, diced -2–3 cloves garlic, minced -6–8 potatoes, peeled or unpeeled, chopped -Chicken broth (enough to cover potatoes) -½ cup heavy cream -2 cans corn, drained -1–2 cups shredded cheddar cheese (or more to taste) -Italian seasoning, paprika, red pepper flakes, salt & pepper. Optional: cream cheese or sour cream for extra creaminess Toppings: green onions, sour cream, shredded cheddar, bacon crumbles, or anything you like Instructions In a large pot, melt butter over medium heat.
