* 1 tbsp olive oil
* 1 lb ground Italian sausage (or substitute with ground chicken or beef)
* 1 small onion, finely chopped
* 3 garlic cloves, minced
* 5 cups chicken broth
* 1 tsp Italian seasoning
* ½ tsp crushed red pepper flakes
* 8 oz sliced mushrooms
* 8 oz pasta of choice
* 1 c heavy cream
* 1 small jar of Alfredo sauce (or make homemade)

Ingredients for the Topping:
* 1 cup ricotta cheese
* ½ cup shredded mozzarella cheese
* ¼ cup grated Parmesan cheese
* 1 tbsp fresh parsley, chopped

Cook the Sausage: Heat olive oil in a large pot over medium heat. Add the ground sausage and cook until browned, breaking it up into small pieces. Remove excess grease if necessary.
Add the chopped onion and cook until softened, about 3 minutes. Stir in the minced garlic and cook for 1 minute until fragrant.
Pour in the chicken broth and bring to a simmer. Add sliced mushrooms. Stir in the Italian seasoning, crushed red pepper flakes, salt, and pepper.
Add the pasta to the pot and simmer for 10-12 minutes, or until the noodles are tender. Stir occasionally to prevent sticking.
Lower the heat and stir in the heavy cream and Alfredo sauce. Simmer for another 2-3 minutes, allowing the flavors to meld.
In a small bowl, combine ricotta cheese, mozzarella cheese, Parmesan cheese, and parsley. Mix until smooth.
Ladle the soup into bowls and top each serving with a generous dollop of the cheesy topping.
