This is one of those recipes I donβt even think about, I just make it π itβs nothing overly fancy, just good, simple ingredients. Save my recipe for later β€οΈ Recipe || Olive Oil π« (a good quality oil, I use @moniniaustralia) Garlic π§ (a few cloves but can you ever have too much?!) Salt + Pepper π§ Fresh Tomatoes π Mushrooms πβπ« Basil πΏ Pecorino Romano (grated) π§ Add garlic, salt, pepper and olive oil to a low heat. Simmer until golden. Add tomatoes and cook until blistered with the lid on. Add mushrooms, basil and cheese. Simmer with the lid on until cooked. I use @chasseur_cookware cast iron cookware. The heat distribution and consistency is amazing! Pasta || 3 cups of plain flour 3 large eggs (if eggs are organic or farm fresh you may need 5-6 eggs) 30mls of good quality olive oil A good pinch of salt Mix in the @kitchenaidausnz stand mixer until combined. Swap to the dough hook and knead until wrapped on the hook. Remove and hand knead on the counter. Cover and rest on the counter for 30 minutes. Roll out using the pasta attachment or with a rolling pin on a lightly floured surface. Cut to desired type of pasta. You can dry the pasta out on a drying rack or cook straight away.
