1 lb Italian Sausage, casing removed 1 small onion, diced 4 cups of chicken broth 1 28 oz can of diced tomatoes 1 package of cheese tortellini or ravioli (fresh or frozen) 1 cup heavy whipping cream 2 cups fresh spinach 3 cloves of garlic, grated Salt, pepper, and Italian seasonings Freshly grated parmesan cheese Here's how you make it: 1. In a heavy-bottomed pot add the Italian sausage and cook until browned. Add in the onion and cook for 4 minutes, then add in the garlic and stir for 1 minute. Season with salt and pepper/ 2. Add in the crushed tomatoes, chicken broth and Italian seasonings. Bring to a boil, then reduce to a simmer. 3. Add in the heavy cream and stir until combined. Once combined, add in the pasta and cook according to the package. Once cooked, add in the spinach and stir to wilt. Taste for seasonings, adjust as needed. Serve and top with freshly grated parmesan cheese.
