Let's get dinner on the table as soon as possible. When I don't know what to make, but know I want something healthy, but comforting, I lean towards a chicken stuffed something! Tonight I'm using fresh broccoli, roughly chopped, cheddar cheese, and cream cheese. Seasoned well, then stuffed into a chicken breast, and breaded. Baked to perfection until gooey and golden. Serve with a side of potatoes or pasta. This can easily be made with any veggies on hand. Here's what you'll need, this recipe will make two breasts, but can easily be modified to make as many as you need. Chicken breasts, cut a slit into the thickest side, just big enough to make a pocket for the filling to sit. 1/2 brick of softened cream cheese 1/2 cup of cheddar cheese 1/3 cup of roughly chopped broccoli 1/2 cup of breadcrumbs olive oil Italian seasonings, salt and pepper to taste. !. Cut slits into the thickest side of each chicken breast. 2. Mix the cream cheese, cheddar cheese, broccoli, and seasonings to a bowl. 4. Stuff the chicken breast with the filling mixture. 5. Dip the chicken into olive oil, then coat with bread crumbs. 6. Add into a baking dish with olive oil, then drizzle olive oil on top. 7. Bake covered at 375 for 35-45 minutes, until golden brown and chicken is fully cooked. LTKVideo LTKhome
