Cooking for my in laws always comes with a little pressure.

It’s been so cold and snowy out, and the world feels so incredibly heavy. I needed something warm and comforting, and this oxtail pho did exactly that.

Ingredients

For the broth
• 3–4 lbs oxtail
• 1 large onion, halved
• 1 piece fresh ginger (about 4 inches), halved
• 1 pho spice bag (store-bought)
• 10–12 cups water
• Fish sauce, to taste
• Salt, to taste
• Rock sugar or sugar, to taste

For serving
• Rice noodles
• Fresh cilantro
• Thai basil
• Scallions
• Bean sprouts
• Lime wedges
• Sriracha

Recipe
Parboil the oxtail for 10 minutes, then drain and rinse. Char the onion and ginger, and spices until deeply browned.
Add oxtail, onion, ginger, pho spice bag, fish sauce, rock sugar, beef paste and water to a crockpot and pressure cook about 90 minutes.
Cook rice noodles according to package instructions.
Assemble bowls with noodles, oxtail, hot broth, and all the toppings. Enjoy!
