RECIPE BELOW: Lemon Posset (aka sunshine in dessert form) Makes 10-12 servings 🍋 Okay, this one’s deceptively fancy. Like—it looks like it belongs at a dinner party with candlelight and linen napkins, but it’s actually just three ingredients, 5 mins of your time, & a little loving. Ingredients: • 2 cups heavy cream • ¾ cup granulated sugar • 5 tablespoons fresh lemon juice (from about 2 lemons) Optional: a little lemon zest, berries, mint, or crushed shortbread to top How to: 1. Warm the cream & sugar Pour the cream and sugar into a saucepan. Stir it gently over medium heat until the sugar dissolves, then bring it to a simmer—not a crazy boil, just little bubbles around the edges. Let it bubble gently for 3 minutes (set a timer!). 2. Add the lemon Turn off the heat. Stir in the lemon juice (and zest if you’re feeling fancy). You’ll see the cream start to thicken slightly—that’s the citrus doing its thing. 3. Pour and chill Pour the mixture into the lemon bowls. Let them cool for a bit on the counter, then refrigerate for at least 1 hour (or overnight). They’ll set up into the dreamiest, silkiest texture. 4. Top & serve When you’re ready to serve, you can top them with fresh berries, a sprig of mint, or crushed cookies if you want a little crunch. Or just eat it as is—it’s that good. lemonposset summerrecipes summerdesserts summertreats lemonrecipes LTKSummerEdit LTKParties LTKSeasonal
