I hesitate to call this a recipe because I usually just eyeball everything—LOL. But here’s my go-to easy veggie tots method:
1. Combine the following in a bowl:
• 1 bag frozen broccoli or cauliflower rice (or use florets and pulse in a blender until “rice” consistency; cook as directed)
• 1 egg
• About 1/2 cup panko crumbs (just enough to hold the mixture together)
• A handful of shredded cheese (or more if you love them cheesy)
2. Use an ice cream scoop to portion the mixture onto a parchment-lined baking sheet.
3. Sprinkle a little extra cheese on top before baking!

That’s it—easy, kid-friendly, and mom-approved!
