I hadn’t been to Senegal in over 10 years and the only thing I could think about having again was dibi. I was first introduced to this wonderful food when I first touched down when I made the life-changing decision to study abroad here while I was in college. Usually grilled lamb over charcoal at street-side dibiteries, eating dibi with family and friends is a best feeling. On my first trip back in over a decade, I found myself craving it — not just for the taste, but for the memories tied to it from when I studied abroad here. (That’s another story for another day LOL.) I almost didn’t get to have it but thankful I was finally able to make it happen.
