•SWEET & SPICY PINEAPPLE SALAD• We’re just gonna keeping the spicy train going over here. 🔥 I literally ate this entire bowl just as is. It has the right balance of flavors! You could also add it to rice, chicken, fish or dice it up for a salsa. 

TO MAKE: Add pineapple, cucumbers, red bell peppers, white onions, jalapeños, white vinegar, salt, cracked pepper and garlic into a large bowl and mix.

•SPICY HIGH PROTEIN PASTA• ready in 20, packed with protein and can be made as spicy (or not spicy) as you want. 🔥 

INGREDIENTS 
2 boxes of @eatbanza rotini pasta 
Olive oil
1 large white onion, diced
8-10 garlic cloves, minced 
Salt, cracked pepper -to taste 
1 can chickpeas, drained 
3 cups spinach 
1 cup sun-dried tomatoes, sliced 
1 cup heavy cream
1 cup grated parmesan cheese, plus extra for topping
2 tbsps @traderjoes Harissa paste (add less or more depending on your spicy tolerance) 

DIRECTIONS 
1. Cook pasta according to package instructions. 
2. Add olive oil, onions, garlic, salt and pepper to a large pot on medium heat. Sauté for 3-4 minutes. 
3. Add chickpeas. Sauté for 3-4 minutes. 
4. Add spinach, sun-dried tomatoes, pasta and olive oil. Gently mix. 
5. Add heavy cream, cheese, salt, pepper and harissa paste. Gently mix. 
6. Top with more cheese before serving.

GIANT PUFF BERRY PANCAKE…perfect for July 4th weekend! 

INGREDIENTS
1 tablespoon butter
4 eggs
1 1/3 cups milk
1 teaspoon vanilla extract
3 tablespoons white sugar
1 1/2 cups flour
1/2 teaspoon salt
Toppings: strawberries, blueberries, powdered sugar, butter, maple syrup 

DIRECTIONS:
1. Preheat oven to 375F. 
2. Grease a cast iron skillet (or large baking dish) with butter. 
3. In a large bowl whisk together eggs, milk, vanilla and sugar. 
4. Add in the flour and salt, mix well. 
5. Pour batter into skillet. 
6. Bake for about 35 minutes or until golden brown. 
7. Remove from oven and top with berries, powdered sugar, butter and syrup.

PAN SEARED ZUCCHINI & CORN 🥒🌽 It’s a ready in 10 minutes, beautifully blended, easy side dish anyone can make. 

TO MAKE: Heat olive oil in a pan on medium heat. Add bite-sized pieces of zucchini. Sear for 1 minute. Add corn, salt and pepper. Sear, mixing often, for another 3-4 minutes.

Here’s a 25-minute meal perfect for busy weeknights, meal prep or Sunday dinner. 🤌🏼

SHELL PASTA WITH MEAT SAUCE 

INGREDIENTS 
Olive oil
1 box of large sea shell pasta 
2.5 pounds lean ground beef 
Salt, cracked pepper- to taste 
6 garlic cloves, minced 
1/2 white onion, diced 
2 cups tomatoes, diced 
3 tbsp tomato paste 
2 15 oz cans of tomato sauce 
Fresh basil and parsley 
1/2 cup heavy cream
1/2 parmigiana cheese (plus extra for toppings) 


DIRECTIONS 
1. Cook pasta according to package instructions. 
2. Add olive oil to a large pot on medium heat.
3. Gently place ground beef into the pot. Season with cracked pepper and salt. Break apart and let cook for 5-7 minutes. Drain if necessary. 
4. Add garlic, onions and tomatoes. Gently mix. 
5. Add tomato paste and tomato sauce. Gently mix. 
6. Lower heat, toss in fresh basil + parsley, mix, cover and let simmer for 10 minutes. 
7. Drain pasta and add to the pot with the meat sauce. Add heavy cream and cheese. Gently mix. 
8. Top with fresh herbs, parmigiana cheese, cracked pepper/ red pepper flakes (optional) before serving.

SLOW COOKER PULLED PORK QUESADILLAS. The last time I prepped pulled pork I made three different meals out of it. These quesadillas were a huge hit with the family. 🔥

INGREDIENTS 
Olive oil 
Pulled pork (pork shoulder slow cooked in crockpot with olive oil, salt, cracked pepper, smoked paprika, brown sugar, bbq sauce, garlic, white onions on high for 5-6 hours or low for 8-10 hours)
White onions, halved and sliced 
Tortillas 
White cheddar, shredded 
Mexican Four Cheese shredded blend 
Toppings: creamy avocado cilantro lime sauce (Greek yogurt, avocado, cilantro, lime juice, cracked pepper), diced white onions, diced tomatoes, cilantro, jalapeños and lime wedges

TO MAKE: add olive oil to a large pan on medium-high heat. Add onions, sauté for 3-4 minutes. Add pre-cooked chopped pulled pork. Cook until lightly browned. About 5-6 minutes. Set aside. 

Using the same pan, on medium heat, add butter and a flour tortilla. On one side of the tortilla sprinkle on white sharp cheddar cheese, followed by pork and then a layer of Mexican shredded cheese. Fold empty side over. Cook one minute then flip. Cook another minute. 

Serve with creamy avocado cilantro lime sauce, diced white onions, diced tomatoes , cilantro, jalapeños and lime wedges

ITALIAN STROMBOLI

INGREDIENTS 
1 cup olive oil
5 garlic cloves, minced 
1 bag of fresh dough from @publix 
Salt, cracked pepper, Italian seasoning 
15 slices of @boarshead_official salami
15 slices of @boarshead_official pepperoni 
5 slices of @boarshead_official ham, diced
1/2 green bell pepper, sliced
1/2 white onion, sliced 
2 1/2 - 3 cups of mozzarella, shredded 
3 cups marinara sauce 
1/2 cup of parmesan, grated 
2 tbsp fresh parsley, chopped 

DIRECTIONS 
1. Preheat oven to 400F. 
2. In a small bowl, combine olive oil and garlic. Mix well. 
3. Remove dough from bag and season. Knead until seasoning is evenly spread. 
4. Add dough to a baking sheet lined with parchment paper. 
5. Roll out dough into a large rectangle and brush with the garlic oil. 
6. Layer on salami and pepperoni, evenly spread ham. 
7. Add peppers and onions to one side.
8. Add mozzarella and dollops of sauce. 
9. Roll up tight making sure to tuck in the edges. Square off edges. 
10. Brush with garlic oil, top with cracked pepper/salt and bake for 25-30 minutes or until fully baked and golden. 
11. Let rest 5 minutes, sprinkle on grated parmesan cheese and fresh parsley. 
12. Slice and serve with garlic oil and sauce.

GREEK TUNA SALAD. Made this for lunch the other day. Ate it all. 🤤

TO MAKE: add chopped romaine, tuna salad (tuna, mayo, diced purple onions, diced pickles, freshly chopped dill, lemon juice, sea salt flakes and cracked pepper), golden raisins, yellow apples, red sweet peppers, purple onions, mini cucumbers, feta and lemons to a large bowl. Use lemons as the dressing or try a Greek dressing. Serve with warm pita slices.

🥭COLLAGEN TROPICAL SMOOTHIE🥭

INGREDIENTS (serves 2) 
4-5 ice cubes 
1 mango
1/2 cup pineapple chunks 
1 banana 
1/2 -3/4 cup almond milk 
Splash water 
1-2 scoops @vitalproteins Collagen Powder 
Toppings: diced mango, coconut flakes, wheat germ, ground flax seeds & @hukitchen Dark Chocolate Gems 

DIRECTIONS
1. Add ice, mango, pineapple, banana, almond milk, water and collagen powder to a blender. Mix until smooth. 
2. Pour in glass and top with diced mango, coconut flakes, wheat germ, ground flax seeds and chocolate gems.

Pad Thai means “Thai-style stir-fried noodles”. There’s so many ways to make it too, which is fun. Never gets boring. Here’s my recipe for a quick and easy CHICKEN + VEGGIE PAD THAI 🥢

2 tbsp butter 
4 chicken breasts, cubed (use scissors to cut)
Salt, cracked pepper, onion powder - to taste 
2 tbsp minced garlic 
1/2 cup soy sauce 
1/2 cup hoisin sauce 
1 box of @anniechunsinc pad Thai rice noodles 
3 eggs 
1 cup matchstick carrots 
1/2 purple onion, sliced 
4 mini sweet peppers, sliced 
2 cups napa cabbage, sliced 
2 green onion stalks, sliced
2 tbsp crushed peanuts 
Sesame seeds 
Lime slices 
Sriracha  + red pepper flakes (optional)

1. Add cubed chicken to a buttered pan on medium heat. 
2. Add salt, cracked pepper, onion powder, garlic and 2 tbsp of soy sauce. 
3. Mix and cook for about 8-10 minutes. 
4. Add 2 tbsp of hoisin sauce, sear until chicken is fully cooked. Mixing often. Once done, set chicken aside in a bowl. 
5. Cook rice noodles according to package instructions. 
6. Using the same pan, add three eggs. Scramble until done. 
7. Toss in carrots, onions and peppers. Mix well. 
8. Add rice noddles, remaining soy sauce, hoisin sauce, cooked chicken and cabbage, gently toss. Add more sauces if needed. 
9. Top with green onions, peanuts, sesame seeds and serve with lime wedges.

To make mix eggs, milk, shredded cheddar cheese, salt, pepper, chopped spinach, bacon and diced onions in a bowl. Pour into heart shaped silicon molds and bake on 375F for 12-15 minutes. ❤️

GREEK-STYLE TURKEY MEATBALLS 
2 pounds @butterballturkey ground turkey meat 
3 red mini sweet peppers, stem/seeds removed
1/2 red onion
10 garlic cloves 
1/4 cup @athenosfeta crumbles
1 sprig of fresh dill
1 sprig of fresh parsley 
2 eggs
1 cup breadcrumbs 
1 tbsp cracked black pepper
1 tbsp salt
1 tbsp garlic powder 
Olive oil 

DIRECTIONS 
1. Add the meat to a large bowl. 
2. In a food processor combine peppers, onion, garlic, feta, dill and parsley. Pulse until everything is finely minced then pour over the meat. 
3. Add eggs, breadcrumbs and seasoning. 
4. Mix and roll into meatballs (about 3 tbsp measurements) you should get about 30 meatballs. 
5. Add olive oil to a large pan on medium heat.  Slowly add meatballs (do in batches) and cook until the meatballs are crisp and fully cooked inside. Make sure to rotate so all areas of the meatballs are cooked evenly. 

WHIPPED FETA DRIZZLE 
1/2 cup @chobani Greek yogurt
1/2 cup @athenosfeta crumbles 
1/2 of a lemon (juice only)
2 cloves garlic
1/4 tsp salt
1/2 tsp cracked black pepper 

DIRECTIONS 
1. Combine yogurt, feta, lemon juice, garlic and seasoning into a food processor and pulse until smooth.

Valentine Oatmeal Bowl. ❤️

To make add 1 cup of oats to a small sauce pan. Cover oats with milk, add a few dashes of cinnamon, stir and bring to a simmer until oats are soft. Add more milk depending on your preference. Top with chocolate chips, blueberries, heart shaped strawberries and sliced almonds.

Sometimes a crispy savory French bread is all we need! 🥖 I made this over the weekend and don’t even know what to call it other than 🔥🔥🔥. 

TO MAKE: slice French bread in half, drizzle with olive oil and toast the slices. I used the @ninjakitchen Ninja Foodi on air crisp mode 400F for about 3 minutes. Then I added the bread to a plate and topped it with blue cheese crumbles, sautéed purple onions/sweet mini peppers, thinly sliced cherry tomatoes, pan fried capocollo, cracked black pepper, sea salt and fresh dill.
ROASTED CREAMY TOMATO SOUP

INGREDIENTS 
Olive oil
5 vine tomatoes
2 large containers of cherry tomatoes
1 cup garlic cloves 
1 large purple onion
3 tbsps white sugar 
Salt, cracked black pepper 
1 teaspoon fresh thyme 
2 cups vegetable stock 
1.5 cups heavy cream 
4 fresh basil leafs 
Red pepper flakes, to taste

DIRECTIONS 
1. Preheat oven to 400F. 
2. Add olive oil, tomatoes, garlic, onion, sugar and seasoning to a large baking sheet. Mix well. 
3. Roast in oven for 25 minutes. 
4. Stir and continue roasting for 15 minutes. 
5. Add tomato mixture and fresh thyme to a blender and purée until smooth. 
6. Transfer to a large pot on medium heat. 
7. Slowly mix in vegetable stock and heavy cream. 
8. Top soup with salt, pepper, freshly sliced basil. 
9. Serve with a grilled cheese sandwich.

CHOCOLATE PEANUT BUTTER PROTEIN SMOOTHIE

INGREDIENTS 
Ice cubes (about 7)
1 frozen banana
1 big tbsp of peanut butter
1 scoop of @drinkorgain Creamy Chocolate Fudge Protein Powder 
2 tbsps of ground flax seeds
1 big pinch of coconut chips
1 cup @califiafarms Almond Milk 
Splash of water, if needed 
Toppings: coconut chips, crushed peanuts, ground flax seeds, chocolate shavings

DIRECTIONS
1. Combine all ingredients into a blender and blend until smooth. 
2. Pour into a glass and top with coconut chips, crushed peanuts, ground flax seeds and shaved chocolate

This HIGH-PROTEIN EGG FRIED RICE is one of my faves to mealprep. Quick, easy and keeps you full. 

INGREDIENTS 

Drizzle of olive oil
1 tbsp garlic, minced
1/2 small purple onion, diced
1 can chickpeas, drained 
Sea salt flakes + cracked black pepper - to taste 
1.5-2 cups cold pre-cooked basmati rice
1 cup frozen peas
5-6 eggs, beaten 
Sliced jalapeños (optional)

DIRECTIONS:

1. Add olive oil, garlic, purple onions, chickpeas, salt and cracked black pepper to a large skillet on medium heat. Sauté for about 5 minutes.
2. Add rice and peas, cook until rice is heated throughly, gently stirring and breaking up any large clumps. 
3. Make a space in the middle of the pan and pour in the eggs. Let sit for a minute then slowly stir the egg puddle pulling in the rice. 
4. Gently stir everything together while in the pan. 
5. Add fried rice to a bowl and top with sliced jalapeños (optional) and more cracked black pepper.

Not your average GREEN BEAN CASSEROLE. Try this fresh version this year and your guests will be impressed! 

NGREDIENTS 
2 pounds (aprox) fresh green beans, trimmed 
Olive oil 
Salt, cracked black pepper, to taste 
5 garlic cloves, minced 
1 small sprig fresh rosemary, finely chopped 
1/2 cup white mushrooms, diced 
2 shallots, sliced 
2 large white onions, sliced
3/4 cup all purpose flour
1 cup heavy cream
3/4 cup beef broth
3 tbsp sliced almonds

DIRECTIONS 
1. Preheat oven to 400F.
2. Boil a large pot of salted water. Add trimmed green beans. Remove after 2-3 minutes and quickly add to an ice bath. Drain after 5 minutes and set aside. 
3. In a large skillet add olive oil, salt, pepper, garlic, rosemary, mushrooms, shallots and one onion. Sauté for 5 minutes. 
4. Add about 1/2 cup of flour and heavy cream, slowly stir. Add broth and stir. Scrape bottom of the pan if necessary. Season to taste. 
5. Pour mushroom mixture over beans and gently mix. 
6. Add to a baking dish. 
7. Bake uncovered for about 15 minutes. 
8. While beans are baking, add the other sliced onion into a bowl, toss with remaining flour and some seasoning. 
9. Add olive oil to a pan on medium heat. Toss in onions and fry until crispy. 
10. Top casserole with crispy onions and almonds before serving.

TANGY CHICKPEA + CUCUMBER SALAD 🥒 Do you ever just start adding ingredients into a bowl  not really thinking and then it turns out so good?! This is one of those recipes. We ordered a pizza, this was the side and it worked. 

INGREDIENTS 
Olive oil
1 15 oz can of chickpeas 
3 garlic cloves, chopped 
1 cup pickled purple onions, sliced 
3 mini cucumbers, sliced
1/2 lemon 
1 tbsp fresh parsley, chopped
Red pepper flakes 

DIRECTIONS 
1. Add olive oil, chickpeas, salt and pepper to a pan on medium to high heat. 
2. Sear for about 5-6 minutes. Remove from heat. Let cool. 
3. Add chickpeas, cucumbers and pickled onions to a bowl. Squeeze in the lemon juice  and parsley, mix. 
4. Top with red pepper flakes before serving.

Super Bowl/party snacks. CHEESEBURGER SLIDERS  🍔

INGREDIENTS 
24 @kingshawaiian Sweet Rolls
Olive oil 
1 large white onion, diced
3 garlic cloves, minced 
3 lbs lean ground beef 
Salt, pepper- to taste 
1 10 oz can tomato purée 
1/4 cup honey dijon mustard
1/4 cup Worcestershire sauce
15-20 yellow American cheese slices 
White sesame seeds 

GLAZE 
4 tablespoons butter, melted 
2 tablespoons honey dijon mustard
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar

DIRECTIONS
1. Preheat oven to 325°F. Line a baking sheet with parchment paper. Set aside.
2. Slice buns in half and place the bottom layer of the buns evenly onto your baking sheet.
3. In a large pan on medium heat, drizzle olive oil. 
4. Add onions and garlic, sauté for about 5 minutes. 
5. Add ground beef and seasoning, break apart and cook until browned. Drain if necessary. 
6. Add tomato purée, honey dijon, worcestershire sauce. Mix well. 
7. Add in 5 pieces of cheese and stir. 
8. Spread beef mixture onto the bottom parts of the buns. Layer remaining cheese slices.
9. Add the top buns, brush with glaze, sprinkle on sesame seeds and bake for about 15-20 minutes or until buns are a light golden brown.
