Trying to stay warm here in South Florida this weekend! Made this SOUTHWESTERN BEAN SOUP. Love making soups because you don’t need to be so exact on the measurements. Just have fun! 🍲 1. Add olive oil to a pot on medium-high heat along with diced white onions, minced fresh garlic, carrots, salt and pepper. Sauté for about 7-8 minutes. 2. Add a 15-ounce can of black beans drained, a 15 ounce can of diced tomatoes drained and a 32-ounce carton of vegetable broth. 3. Gently stir, lower heat to medium and cover. Let simmer for 20 minutes. 4. Add a scoop of precooked rice (I always have prepped rice on hand) to a bowl and then ladle in the soup. 5.
