Blair made a homemade Christmas fruit cake from scratch and we baked the apples too. ππ More recipes at @baking.with.blair by @blairacarpenter βΈ» π Christmas Fruit Cake: Inspired by Little Women. Adapted from @ediblegarden. Dried orange peels: 350Β°F, bake ~20 min, flip last 5 min. Ingredients: 1 c flour, 1/2 c chopped cashews, 1/4 c black raisins, 1/2 c mixed dried fruit (dates, cherries, orange peel), 1/2 c sugar (caramel), 3/4 c sugar (batter), 2/3 c butter, 3 eggs, 1/2 tsp cinnamon, 1/4 tsp clove, 1 tsp baking powder, 1 tsp vanilla, 1/4 tsp salt. Instructions: Melt 1/2 c sugar to dark caramel. Off heat add 1/4 c water, return to heat, stir smooth, cool. Heat oven 350Β°F. Toss fruit/nuts with 3 Tbsp flour. Mix remaining dry ingredients. Beat butter + sugar, add vanilla. Alternate eggs and dry mix. Fold in caramel + fruit. Bake 50β55 min. Cool. Dust with icing sugar. βΈ» π Baked Apples: Ingredients: 6 baking apples, 1/2 c brown sugar, 1 tsp cinnamon, 1/8 tsp nutmeg, 1/3 c dried cranberries or raisins, 3 Tbsp butter, walnuts optional, 1 c hot water or cider. Instructions: Heat oven 375Β°F. Mix sugar, cinnamon, nutmeg, fruit. Core apples, stuff filling, top with butter (and walnuts). Place in dish, add liquid. Bake 45β60 min until tender.
