Easy and quick meal prep idea: Mexican Stuffed Peppers Peppers (I like red, yellow, and orange) Ground meat of your choice 1–2 taco seasoning packets & a little water (I usually eyeball it) Salsa with black beans & corn Shredded sharp cheddar cheese 1. Cut peppers in half, remove seeds. Roast on oiled baking sheet at 400°F for 20 min, flip halfway. 2. Brown meat, add taco seasoning & water. 3. Lower oven to 375°F. Fill peppers with meat, top with salsa & cheese. 4. Bake until cheese is melted & bubbly. Great to eat throughout the week reheat and add toppings like guac, jalapeños or sour cream.
