🐟 Bang Bang Salmon Bites Ingredients Salmon • 1½ lb fresh salmon, skin removed, cut into 1½-inch cubes • 1 tbsp olive oil • 1 tsp paprika • ½ tsp garlic powder • ½ tsp onion powder • ½ tsp salt • ¼ tsp black pepper • Optional: pinch of cayenne (if you like heat) Bang Bang Sauce • ½ cup mayonnaise • ¼ cup sweet chili sauce • 1–2 tbsp sriracha (to taste) • 1 tbsp honey or sugar • 1 tsp rice vinegar or lime juice For garnish (optional but cute): • Green onions • Sesame seeds ⸻ Instructions 🔥 Option 1: Air Fryer (BEST texture) 1. Preheat air fryer to 400°F 2. Toss salmon with olive oil and seasonings 3. Air fry for 7–9 minutes, shaking halfway, until crispy and cooked through 4. Toss warm salmon gently in Bang Bang sauce or drizzle sauce on top ⸻ 🔥 Option 2: Oven Baked 1. Preheat oven to 425°F 2. Line baking sheet with parchment 3. Bake salmon for 10–12 minutes 4. Broil for 1–2 minutes if you want extra crisp edges 5. Sauce it up ✨ ⸻ 🔥 Option 3: Pan-Seared 1. Heat skillet over medium-high with a little oil 2. Cook salmon in batches, 2–3 minutes per side 3. Remove from heat and toss with sauce ⸻ How to Serve • Over jasmine rice or coconut rice • In lettuce cups • In tacos with slaw • On a salad for a “healthy-ish” dinner • Straight from the pan (no judgment) ⸻ Pro Tips • Don’t over-sauce — toss lightly, then drizzle more • Works great with salmon bites from Costco • Sauce can be made ahead and keeps 4–5 days in the fridge #LTKselfcare #LTKfoodie #LTKfitnessgoals
Lemon Rosemary Sheet-Pan Chicken 🐓 🍋 🌿 Ingredients • 2–2½ lbs chicken thighs or drumsticks • 2 lemons (1 sliced, 1 juiced) • 3–4 cloves garlic, smashed • 2–3 sprigs fresh rosemary (or 1½ tsp dried) • ⅓ cup olive oil • 1 tsp kosher salt • ½ tsp black pepper • ½ tsp paprika (optional but great for color) • Optional add-ins: baby potatoes, green beans, or carrots Instructions 1. Preheat oven to 425°F. 2. In a bowl, whisk olive oil, lemon juice, garlic, rosemary, salt, pepper, and paprika. 3. Toss chicken (and veggies if using) in the marinade. 4. Spread everything on a sheet pan, skin-side up. Tuck lemon slices around. 5. Roast 35–45 minutes, until chicken is golden and reaches 165°F. 6. Broil 2–3 minutes for extra crisp skin if needed. Honey-Garlic Pork Tenderloin Bowls (Healthy-ish + Big Flavor) Ingredients • 1 pork tenderloin (1–1.25 lb), sliced into medallions • Salt, pepper, garlic powder • 2 tbsp olive oil • 3 cloves garlic, minced • 2 tbsp soy sauce (or coconut aminos) • 1 tbsp honey • 1 tbsp rice vinegar or lemon juice • Steamed rice or cauliflower rice • Veggies: broccoli, snap peas, carrots, or zucchini Directions 1. Season pork with salt, pepper, garlic powder. 2. Sear in a hot skillet 2–3 minutes per side; remove. 3. In the same pan: add garlic → soy sauce → honey → vinegar. 4. Add pork back in and simmer until glazed (3–4 minutes). 5. Serve over rice with roasted or steamed veggies. So good and tastes like take-out but way lighter. #LTKOver40 #LTKHome #LTKfoodie

The first “The Friday Five” of 2026 is here! And, it’s a good one, if I do say so myself. 😜 (Comment PIXIE for the links.) This 5 is “My Five Favorite Purchases from 2025”. BTW, how long into the new year is it ok to say Happy New Year? All of January? Is February too late? Ya know when someone “Happy New Years” you too late and it takes you a min. What is that cut off? Anyway, 5 favorite purchase. Here we go… 1. These big, puffy hearts make me so happy. 🖤 In 2025, I got the gold and the matte black. Two new colors are my first purchases of 2026, too. Getting ready for Valentine’s Day season, of course. 2. Possibly, my most worn item last year, my checkerboard crossbody. I’m shocked at how looks this compliments. All seasons, too. I love it! 🏁 3. My oversized, tiger cardigan. First, if it’s got a tiger, I’m probably buying it. This oversized sweater is cozy and cool and, definitely, a big time favorite purchase in 2025. I’ll be wearing the into old age, for sure. 🐅 4. Sweatpant jeans were the theme of 2025. I would’ve never believed I’d take this plunge, but I also never believed a brand could make them cool. But…here we are and they are cool. Do you own a pair yet? I’ve tried less expensive dupes, but have found none as good. These are worth it! Your cost per wear will be minimal. 👖 5. These leopard adidas get all the use. (Big cats are my weakness.) They are outfit-makers. You can have in the most simple jeans and a white tee, add these and you look out together and stylish.
