🐟 Bang Bang Salmon Bites

Ingredients

Salmon
	•	1½ lb fresh salmon, skin removed, cut into 1½-inch cubes
	•	1 tbsp olive oil
	•	1 tsp paprika
	•	½ tsp garlic powder
	•	½ tsp onion powder
	•	½ tsp salt
	•	¼ tsp black pepper
	•	Optional: pinch of cayenne (if you like heat)

Bang Bang Sauce
	•	½ cup mayonnaise
	•	¼ cup sweet chili sauce
	•	1–2 tbsp sriracha (to taste)
	•	1 tbsp honey or sugar
	•	1 tsp rice vinegar or lime juice

For garnish (optional but cute):
	•	Green onions
	•	Sesame seeds

Instructions

🔥 Option 1: Air Fryer (BEST texture)
	1.	Preheat air fryer to 400°F
	2.	Toss salmon with olive oil and seasonings
	3.	Air fry for 7–9 minutes, shaking halfway, until crispy and cooked through
	4.	Toss warm salmon gently in Bang Bang sauce or drizzle sauce on top

🔥 Option 2: Oven Baked
	1.	Preheat oven to 425°F
	2.	Line baking sheet with parchment
	3.	Bake salmon for 10–12 minutes
	4.	Broil for 1–2 minutes if you want extra crisp edges
	5.	Sauce it up ✨

🔥 Option 3: Pan-Seared
	1.	Heat skillet over medium-high with a little oil
	2.	Cook salmon in batches, 2–3 minutes per side
	3.	Remove from heat and toss with sauce

How to Serve
	•	Over jasmine rice or coconut rice
	•	In lettuce cups
	•	In tacos with slaw
	•	On a salad for a “healthy-ish” dinner
	•	Straight from the pan (no judgment)

Pro Tips
	•	Don’t over-sauce — toss lightly, then drizzle more
	•	Works great with salmon bites from Costco
	•	Sauce can be made ahead and keeps 4–5 days in the fridge

Lemon Rosemary Sheet-Pan Chicken

Ingredients
	•	2–2½ lbs chicken thighs or drumsticks
	•	2 lemons (1 sliced, 1 juiced)
	•	3–4 cloves garlic, smashed
	•	2–3 sprigs fresh rosemary (or 1½ tsp dried)
	•	⅓ cup olive oil
	•	1 tsp kosher salt
	•	½ tsp black pepper
	•	½ tsp paprika (optional but great for color)
	•	Optional add-ins: baby potatoes, green beans, or carrots

Instructions
	1.	Preheat oven to 425°F.
	2.	In a bowl, whisk olive oil, lemon juice, garlic, rosemary, salt, pepper, and paprika.
	3.	Toss chicken (and veggies if using) in the marinade.
	4.	Spread everything on a sheet pan, skin-side up. Tuck lemon slices around.
	5.	Roast 35–45 minutes, until chicken is golden and reaches 165°F.
	6.	Broil 2–3 minutes for extra crisp skin if needed.

Serve with: roasted potatoes, couscous, or a simple arugula salad.

Honey-Garlic Pork Tenderloin Bowls (Healthy-ish + Big Flavor)

Ingredients
	•	1 pork tenderloin (1–1.25 lb), sliced into medallions
	•	Salt, pepper, garlic powder
	•	2 tbsp olive oil
	•	3 cloves garlic, minced
	•	2 tbsp soy sauce (or coconut aminos)
	•	1 tbsp honey
	•	1 tbsp rice vinegar or lemon juice
	•	Steamed rice or cauliflower rice
	•	Veggies: broccoli, snap peas, carrots, or zucchini

Directions
	1.	Season pork with salt, pepper, garlic powder.
	2.	Sear in a hot skillet 2–3 minutes per side; remove.
	3.	In the same pan: add garlic → soy sauce → honey → vinegar.
	4.	Add pork back in and simmer until glazed (3–4 minutes).
	5.	Serve over rice with roasted or steamed veggies.

So good and tastes like take-out but way lighter.

Gouda-Stuffed Chicken Breasts (Quick + Impressive)

Ingredients
	•	Chicken breasts
	•	Smoked or regular Gouda slices
	•	Spinach or basil (optional but great)
	•	Salt, pepper, garlic powder, paprika
	•	Olive oil

How to
	1.	Slice a pocket in each chicken breast.
	2.	Stuff with a slice (or two 😏) of Gouda + a handful of spinach/basil.
	3.	Season outside with salt, pepper, garlic powder, and paprika.
	4.	Sear in a hot pan with a little olive oil 2–3 min/side for color.
	5.	Bake at 375°F for ~18–22 min or until 165°F internal temp.

→ Serve with roasted veggies or a side salad.
