On The Menu: Creamy Cauliflower Gnocchi Soup 🥕🧅 The Line Up 🛒 • 1 tray boneless skinless chicken breasts or thighs • 3-5 cloves garlic, chopped or minced • 1 yellow onion, chopped • 6 carrots, chopped • 4 celery stalks, chopped • 4 cups low sodium chicken or vegetable broth • 1 can coconut cream • 1/2 cup sun dried tomatoes • 4 cups baby spinach • 1/2 cup grated parmesan • 1 bag frozen cauliflower gnocchi (or potato) • 2 tablespoons salted butter • 2 tablespoons all-purpose flour • extra virgin olive oil • italian seasoning • garlic powder • smoked paprika • thyme • chili flakes • kosher salt • black pepper The Method 👩🏻🍳 1. In a large soup pot set over medium heat, combine the olive oil, onion, celery and chopped carrots. Cook until fragrant. 2. Stir in the butter and flour, cook 1 minute. Add the chicken, garlic, italian seasoning, paprika, thyme, and a pinch each of chili flakes, salt, and pepper. 3. Add 4 cups (1qt) broth and simmer over medium heat for ~ 20 minutes, until the chicken is cooked through. 4. Pull the chicken out and shred using 2 forks. Add back to the soup. 5. Stir in the spinach, sun-dried tomatoes, coconut cream/milk, parmesan, and gnocchi. Cook until warmed throughout, ~ 5 minutes. If the soup is too thick, add additional broth or water. 6. Serve the soup topped with parmesan.
