Recipe: Mutton Shinwari Karahi . Ingredients: * 1 kg mutton * ½ cup ghee or oil * 6–8 green chilies (whole or slit) * 4–5 fresh tomatoes * 1½ tbsp garlic paste * 1 tsp crushed black pepper * Salt to taste * 1 tsp crushed coriander seeds ( bhuna and crushed) * 1 tbsp lemon juice * Fresh coriander & julienned ginger for garnish Method: 1. Cook the mutton: Heat ghee in a karahi, fry mutton on high for 5–7 mins until color changes. Add garlic paste and fry until fragrant. 2. Add tomatoes: Add fresh whole tomatoes (cut in halves if you like). Cover and simmer a little until tomatoes soften. I don’t like the skins, so I removed them and mashed the tomatoes slightly. Simmer until meat is tender and tomatoes break down. Stir occasionally. 3. Season: Once oil separates, add salt, black pepper, coriander seeds and green chilies. Stir-fry on medium-high to thicken the masala. 4. Finish: Squeeze in lemon juice and garnish with fresh coriander and julienned ginger.
