Steal my easy pizza recipe 🍕

(makes 2-3 pizzas)
3.5-4 Cups 00 Flour
2.5tsp instant yeast
2 tsp salt
1.5Cups water, 110 degrees (tap water as hot as you can get it is fine)
2 Tbsp olive oil plus 2 tsp

Directions:
Combine the flour, yeast and salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball.

Scrape the dough onto a lightly floured surface and gently knead into a smooth ball.
Grease a large bowl with remaining olive oil, add the dough, cover with plastic wrap or a damp towel and put it in a warm area to let it double in size, about 1-2 hours. (House temperature will impact)
Once risen, turn the dough out onto a very lightly floured surface and divide into equal pieces.
Cover each with a clean kitchen towel or plastic wrap and let them rest for 10(ish) minutes.

Stretch to shape, top with favorite toppings, bake at 425F for 20 minutes or until done.

One of the best things I did as a mom was start bringing these notebooks with me everywhere we went.

How did we live without this for over a year?!?

Our loft has been completely transformed by this. Not just in looks, but functionality and use. You can always find at least one of the kids up here coloring, reading, or just hanging out with a book.

If you have a space you’ve been putting off making more functional for your family, just go for it! It doesn’t need to be an over the top make-over. An easy win can make a world of difference.

Making this the year of passing on traditions.

My hope is that when life feels heavy this year, these simple rituals help connect us, recenter us, and help us remember the important things are often the quiet, ordinary moments.
