Dave got some fresh honey from the neighbors hives today so masala chai was in order. Fun fact: The word Chai means “tea” and Indian culture uses Masala chai as their hospitality drink. This recipe I found in a magazine in 2012 is true to an authentic Indian cup and has the perfect amount of each ingredient. 8 cups water 2 tsp finely diced fresh ginger ½ tsp ground cloves ½ tsp cardamom powder 2 tbsp loose Darjeeling tea (or other strong black tea 2 tbsp brown sugar 2 cups whole milk 1 tbs honey - In a saucepan bring water,ginger, cardamom, and cloves to a boil. Reduce heat toasimmer and add tea, sugar, milk, and honey. Simmer 2 to 3 minutes, stirring occasionally to dissolve the sugar. - Strain tea into cups and serve hot.
